The very famous butter cake, Mrs SK Ng's recipe, shared by Table for 2. Very fragrant, buttery & soft! I made some slight modification on the recipe for the chocolate portion & marbling effect. Ingredients *7" square pan 230g salted butter - softened (not till surface turn glossy) 4 egg yolks 150g sugar 200g self raising flour - sieved 60ml milk 1 tsp vanilla extract 4 egg whites 50g sugar 1tbsp cocoa powder - sieved Method Preheat oven at 170C. Line the base and grease the sides of baking tin. Cream butter & 150g sugar till light & fluffy. Add vanilla extract, continue whisking until well combined, then add in the egg yolks, one by one, mixing well after each addition. Add in half of the sieved flour and mix well on low speed. Then add in milk in 2 batches and mix until well combined. Finally add in the last portion of flour, mix until well combined. Set aside. Beat egg whites until attained soft peaks, then gradually add 50g sugar and continue beating until attained stiff peak. Transfer half of the meringue into the yolk batter and mix until well combined. Then fold in the balance meringue in 2 batches. Divide batter into 2 portions. Fold in the sieved cocoa powder into one of them. Transfer cocoa batter first to baking tin, tap the tin on the counter few times to level the batter. Then add in half of the plain batter, try to cover the area as much as you can. With a fork/skewer, swirl lightly. Finally add in the balance plain batter, try to cover the marbled area as much as you can, then tap the tin again on the counter few times to release trapped air & level cake top. Send to bake for 45 minutes or until skewer comes out clean. When baked, leave the tin upright to cool on rack. The sides will pull away after few mins, then invert the tin to remove the baking sheet and mould, then invert back up right to cool completely.
I adapted my Pandan Butter Cake Recipe to bake this Low Sugar, Soft and Fluffy Butter Cake. The egg separation method is adapted from the famous "Mrs Ng Butter Cake recipe". I used a separated egg method because it yields a very fine and soft cake.

Mrs Ng SK's butter cake recipe is very famous, and deservedly so. It makes the most buttery and tender butter cake possible. The original recipe is perfect for me in every way except for one thing. I find it a bit too sweet. My adapted version uses less sugar. The original buttery goodness is unchanged after the adaptation. My baking temperature is lower than Mrs Ng's since there's less sugar in my cake.

This cake is so buttery, soft and full of butter and pandan aroma. I could eat a lot if I don't control. However, this is low sugar butter cake. I used brown sugar instead of white caster sugar.

Pin It Now! I have been bookmarked Mrs NgSK’s butter cake for so long. After knowing this month Bake-along theme is marble butter cake I knew this is the one I going to bake. For marble effect I mixed some batter with cocoa powder. This recipe definitely is a keeper as it gives soft and fluffy cake texture. If you are butter cake lovers this may the one you like! Flat and no crack Recipe adapted from Wendy with minor changes Butter Marble Cake (Mrs NgSK's Vanilla Butter Cake) Ingredients: (A) 250g butter (salted), softened 50g + 100g sugar (150g in total) (B) 4 large eggs 200g self raising flour, sifted. 60ml milk 1 teaspoon vanilla extract (C) Cocoa mixture 10g cocoa powder 2 tablespoons hot water *mix together and set aside Method: 1. Preheat oven at 160C. Prepare a 8 inch square pan. Line the base and grease the sides (greasing helps the cake’s sides to rise well) *Adjust your oven temperature accordingly. 2. Separate the eggs, and place the whites into a medium sized bowl (6 cup capacity). Beat egg whites until soft peaks, gradually add 50g sugar and beat until stiff. Set aside. 3. Cream butter and 100g sugar until pale and fluffy. Put in vanilla extract and beat for a while. Put in egg yolks one by one and beat well after each addition. 4. Put in half the flour and mix on low speed until incorporated. Put in milk in 2 additions and mix until well incorporated. Mix in balance of flour. 5. Put half the egg whites in and fold. Pour the balance of egg whites in and fold till combined. 6. Scoop about 3 dollops of batter into cocoa mixture. Mix well and this will be the cocoa batter. 7. Pour about 1/3 plain batter into prepared pan. Scatter half the cocoa batter throughout the top. Repeat the process till finish all the batter. Using a chopstick twirl the batter together using a figure-eight motion to mix batter up to get marble design. 8. Bake for 45 minutes or until skewer comes out clean.
