While looking through a fairly old cookbook, I found a recipe for Kaki Mochi Chocolate Chip Cookies, but one of the ingredients was Rice Krispies, which I didn't have on hand. I searched online and found a recipe on Foodland's website that didn't require the Rice Krispies, so I used that recipe instead, with a few adjustments. I enjoyed the cookies and the sweet and salty combination. All of my kids were a little shocked to see kaki mochi in the cookies, and although they ate the cookies, two of them said they'd rather have the cookies without the kaki mochi. Kaki Mochi Chocolate Chip Cookies Ingredients: 1 1⁄2 c flour 1 t baking soda 1⁄4 t salt 1⁄2 c butter, softened 1⁄2 c sugar 1⁄2 c brown sugar 1 egg 1 t vanilla extract 1 T shoyu 2 c kaki mochi 1 c chocolate chips Instructions: Preheat oven to 350F. Combine the flour, baking soda and salt in a medium bowl. In a separate medium bowl, cream the butter and sugars until light and fluffy. Beat in the egg, shoyu, and vanilla. Mix in the flour mixture. Stir in the kaki mochi and chocolate chips. Drop by tabelspoonful onto parchment-lined cookie sheet. Bake for about 12 minutes or until lightly browned. You can view Foodland's recipe here.

Hello everyone! I have this quick card share for you today. I used the Monster Love stamp set from My Favorite Things and created a birthday card. I also used a different technique that I learned from the talented Amy Lee (IG: thecraftbunny). I took the Altenew Academy course called Easy Blending Techniques which Amy taught and I wanted to try the confetti look so this is what I came up with: For this technique you blend your distress inks using a blending tool. Then use the same distress inks add water and using a brush you flick it onto your card creating a confetti effect. Let your card panel dry completely before adhering anything onto it. I liked how it turned out but on a side note next time I won't add shimmer onto distress ink because it activated the colors and move it around hence the not so pretty balloons. A couple of friends on IG put mochi stuffed cookies on my radar, so when I had some extra time I looked up recipes on the internet. I found a recipe on pepper. that I liked. See it here. One thing to note before starting is that the cookie dough needs to be chilled for an hour. For the cookie dough, mix together: 1/2 cup sugar, 3/4 brown sugar, and 1/2 cup melted butter in a bowl. You'll need to whisk until the mixture comes together and becomes lighter in color. Add in one egg to the mix. Sift the following into the mixture: 1 1/4 cups flour, 1/4 dark cocoa powder, and 1/2 teaspoon baking soda. Mix together well with spatula and chill for an hour. While your dough is chilling, start on your mochi. Mix 1/2 cup mochiko with 2 1/2 tablespoons cornstarch, 1 tablespoon sugar, and 1/2 cup plus 2 tablespoons milk. Cover the bowl with plastic wrap and microwave for 30 seconds at a time and stir each time. To get the mochi texture, it took me about 2 minutes total. Mix in 1 tablespoon softened butter. Let cool. As your hour ends, preheat your oven to 350 degrees. The recipe says to portion the cookie dough and mochi into balls, but it didn't say how many so I took a guess and made a dozen each. Working with the mochi is sticky so I used plastic wrap to roll the balls. I also had to take a taste. The mochi is not as sweet as I am used to, but it balances the sweetness of the chocolate cookie. Take a cookie dough ball and flatten. Place the mochi ball in the center and close the cookie dough over the mochi. Bake for 12 minutes and let cool before serving. At 12 minutes, the cookies did not look done, but I trusted the process and took them out of the oven. As they were cooling, they started to harden. My daughter and I can never wait for cookies to fully cool so we started in on one, but it was way too soft and gooey. We totally still ate it and it made us excited for how the cookies would be even better when fully cooled. And they were! These cookies had a nice crispy edge with a softer texture over the mochi in the middle. They are our new favorite cookie!
