My first experience growing White Half-runner beans was awful. Having purchased them from a commercial source (Southern States), I soon discovered that most of the pods were flat, tough and inedible (large companies may not bother to notice natural mutations and out-crosses that contaminate heirloom varieties with tough pod types). This is a tender-podded selection that I found within a commercial seed batch and it is delicious. Vines are moderately vigorous and should be provided with a trellis or teepee. Pods are 5 in. long and borne in 1s or 2s and yields are not exceptionally high, but pods are plump and meaty with a milder flavor than dark-seeded types. Pick them when seeds swell inside, de-string, and cook slow. 65-75 days from seed to harvest. Seed produced in Morgantown, WV. 100% germination 12-3-2023. 30 seeds (sows 10 ft row)
This recipe is one of our favorites from Maangchi's Big Book of Korean Cooking, our December 2019 pick for BA’s Cookbook Club. We like to think of this sweet and salty dish as a sort of vegetarian bulgogi. Marinating and pan-frying eggplant keeps it firm, flavorful, and chewy—almost meaty. It’s a versatile dish that makes a great side for rice and many other preparations. The eggplant tastes wonderful right off the stove, but it’s even better after a few hours, when all the flavors have had time to mingle and deepen. Seek out Korean eggplants, if possible, which are sold in Korean markets. They are thinner than ordinary eggplants and the skin is more tender. But regular eggplants work, too.
