TESTA Generalmente suddivisa in tre parti (magro, ossa e grasso) viene utilizzata in parte per la consumazione umana ed in parte per la produzione di farine proteiche per uso zootecnico. Neppure le orecchie e lingua vengono buttate. GOLA e GUANCIALE Sono la parte di grasso che va dalla testa alla spalla. Si usa per il salame crudo, ma poiché tiene bene la cottura viene utilizzato anche per fare cotechino e zampone. SPALLA Dalla spalla si ottiene il "prosciutto cotto di spalla". Oppure si suddividono le due parti che la compongono: la fesa e il muscolo. La prima, essendo più pregiata e tenera, viene usata per la produzione del salame crudo; il secondo, più duro, viene utilizzato per la preparazione di prodotti che richiedono cottura (cotechino, salame cotto, mortadella e würstel). PANCETTA E' la parte anteriore del costato. Si distingue in parte parte magra e parte grassa. La parte grassa, fino a percentuali del 20-25%, si utilizza per la preparazione del salame. Acconciata, speziata ed arrotolata dà origine al prodotto omonimo in tutte le sue varietà. COSCIA E' il taglio più pregiato: viene utilizzato per la produzione del salame crudo e dei prosciutti (crudi o cotti). COPPA Rifilando, snervando e sgrassando il capocollo si ricava questo taglio utile alla produzione del salame crudo. LOMBO (o LONZA) Si suddivide in tre parti: carré, lonza e capocollo. Dal carré si ricavano le braciole (la parte attaccata al prosciutto si chiama culatello o fondello e viene usato per alcuni tipi di salame crudo); la lonza si può consumare arrosto o a fettine; dal capocollo si ricava, dopo la rifilatura e la sgrassatura, la coppa. ZAMPE Vengono svuotate e utilizzate come contenitori per gli zamponi. GRASSO Possono distinguersi vari tipi di grasso: il lardo, il lardello, il grasso perirenale (o sugna), il grasso duro di schiena, il grasso di gola. Tutti questi vengono utilizzati nella preparazione degli insaccati cotti e crudi. Dalla sugna, invece, dopo un trattamento a caldo, filtrazione e colatura, si ottiene lo strutto. COTENNA E' la pelle del maiale, ripulita e raschiata dalle setole. Macinata, è uno degli ingredienti del cotechino o dello zampone; l'eccedenza viene trasformata in gelatina animale. Generalmente, gli involucri per gli zamponi si ricavano anche dalla cotenna che ricopre la spalla. FRATTAGLIE La lingua va nella testa in cassetta; la cervella è utilizzata da sola, in certe zone nei sanguinacci; il fegato nelle "frisse". Ciò che non è utilizzato per l'alimentazione umana viene trasformato in farine per nutrire gli animali. OSSI, CODA, UNGHIELLI, SANGUE Aziende specializzate li trasformano in farine per uso zootecnico. SETOLE Un tempo venivano vendute a industrie che producevano pennelli e spazzole. Oggi vengono trasformate in farine per uso zootecnico. Le setole non bruciano, non si possono tritare, non si decompongono: la trasformazione avviene attraverso un processo di idrolisi, che ne smembra le fibre proteiche con forti scariche elettriche in acqua e sali. Here are all 26 letters in capital and lowercase, broken down step by step with varying handwriting strikes to practice writing the letter. Pages come with the letter at the top, with the direction of the strokes. Example A 1. slant to the left, 2. slant to the right, 3. slant across the center. This is followed by three images that begin with the letter, in the case of the letter x, middle and ending words like box, and fox are included. There are five sections under this with several strokes. Continuing with the example as A the first box contains a slant to the left, the second box a slant to the right. The third box has slants going across, that begin at the left and end on the right. The forth box will always contain the strokes to form the letter. In this case Slant to the left, slant to the right, slant across, repeat. The final box will also always have the letter in the correct formation (to spell the word A). All pages vary except for the letter l since they are simple and it's best to practice the form than break it down any further than necessary. Last year I saw a great post from Heidi at Heidi Songs about using her sight word videos with white boards. It was a big hit with my kiddos last year and today I decided we were ready to try it with this group. They LOVED it! It's a super simple activity that gets them connecting with the videos in a whole new way. Total engagement......very little effort. Win-win! To keep them from writing/ erasing/ writing/ erasing.....you get the idea....I simply didn't give them an eraser and told them not to erase with their fingers. We wrote each word one time and we kept going until our boards were full. That gave us about 13-15 songs which was a full 20 minute activity. They were sad when it was done! I gave them a tissue when we were done to erase really quick (handing out erasers drives me crazy, a quick tissue for each pair makes for fast clean up). Here is a video example from last year. There are a ton of engaging videos to get you singing and moving in your classroom. We love the math videos too! We can't get enough of Heidi Songs in our classroom!
