I’ve been trying to cook lechon kawali since last year but it took me few tries before I was satisfied with the result. The taste is good but I was looking for a crunchy skin that I was not getting when I baked it in the oven. So last December, I tried to cook it using the turbo, and voila, it came out perfect; soft and tender inside and crunchy on top. I served it during our Christmas lunch and my in-laws liked it too so it is a confirmation that I cooked it right. Turbo oven lang pala ang need ko. Hehehe! Cooking lechon kawali is so easy. First I brine it (salt and water) for few hours. 1/4 cup of salt per 1 liter of water. Boil for 40 minutes or more (depends on the size of the meat) with garlic, laurel leaf, and whole peppercorn. Air dry for few minutes. Make a few cut on top so it will be easy for you to slice it. Cook it in the turbo oven for 30 to 40 minutes at 200C Update April 2021 Since 2016, I've been cooking lechon kawali in our turbo oven but it was broken after 2 or 3 years of use. I was contemplating if I will buy a new turbo oven but I ended up using our gas range oven to cook lechon kawali but I am not getting the same result so I seldom cook this at home. Fast forward to last week, we already invested in Philips Air Fryer HD9270 so I immediately cook my favorite Lechon Kawali and I'm so happy because finally, the skin of the lechon kawali is already crispy and I only cook this for 20 minutes (200C) so mas madali compared to turbo oven. In 2007, a young chef, Lena Kwak, did an internship at The French Laundry, and we asked her to stay. She was interested in nutrition, and as we found ourselves increasingly responding to diners who had specific dietary requests and restrictions, we often looked to Lena (pronounced "Lenna") to test new recipes. One of the most common requests we get is for gluten-free breads, cakes, cookies, pasta, and other preparations. And gluten intolerance is a condition we take seriously. Every meal at The French Laundry begins with a cornet, a savory cone-shaped tuile filled with crème fraîche and salmon tartare. So Corey Lee, chef de cuisine at the time, asked Lena to develop a gluten-free tuile. And she moved on to other gluten-free products. Lena didn't realize how important her work was until a diner came back to the kitchen, not to thank the chef, but to see her. "She wanted to thank me for the brioche," Lena recalls. "She started crying. She hadn't been able to eat bread in seven years. People don't realize how special the simplest pleasures are until they can't have them." Lena had worked hard to create an all-purpose mixture, based on different rice flours, potato flours, and cornstarch, that she could use in any gluten-free baked good, one that could be substituted cup for cup, gram for gram, for wheat flour. It was so good that Corey suggested she talk to me about developing a product we could market. It was 2010, and I was already making a number of products for Williams-Sonoma, but this one was potentially the most special of all. And that's how Cup4Cup was born. Denna är gjord helt på måfå. Så det så! Men riktigt god var den. Och när man letar i kylen hittar man både det ena och det andra att slänga med. Skattjakt i kyl och frys, det är grejer det! Hittade hemkokt buljong, svamp, gråsaltad skinka och ja, ni kan se själv på bilderna! Ha en fin kväll! Kinagryta a la Frostrosor 400 gram skinka (jag använde gråsaltad julskinka, men ta annars t.ex. picnicbog eller annat fläskkött) 1 rödlök, skuren i båtar 1 stor morot, skuren i halvmånar 1 grön paprika, i bitar 200 gram vitkål, strimlad 100 gram svamp (jag använde fryst blandsvamp) ½ färsk vitlök, hela klyftor 1 bit färsk ingefära, saften (stor som en tumme) ½ färsk ananas, i bitar 2 msk tomatpuré 2 msk sweet chili-sås 2 tsk kinesisk soya 1 tsk balsamvinäger 7 dl buljong (hemkokt eller på tärning) Salt och peppar Maizenastärkelse till redning Fräs köttet i olja. Lyft det åt sidan. Hetta upp mer olja i en stor panna och fräs på morot, lök och vitkål. Släng med svampen. Tillsätt efter en stund vitlöksklyftorna och paprikan. Låt inte vitlöksklyftorna ta färg. Tillsätt tomatpuré, pressa över saften av ingefära, häll i chilisåsen, sojan, vinägern och rör om. Tillsätt köttet. Häll över buljongen och ananasen. Låt allt puttra ett par minuter. Smaka av salt och peppar. Red av med lite maizenastärkelse utrört i en skvätt vatten. Servera med basmatiris.

Kringle is a Scandinavian pastry which developed over the years into several kinds of sweet, salty or filled pastries. My Tante Lena makes her Kringle with a buttery Zwieback (yeast) dough and I still hope to one day get together with her to see her make them. For now - I have her recipe and two methods of rolling and shaping them. This first method pictured is closer to the way she shapes them and since I was using one hand to hold the camera, I hope my explanation makes sense. I started off with pinching off evenly sized buns. Then I shaped the bun into a rectangle and rolled it into a snake about 12 inches long, just like kids do with play dough, using both hands. To get the twist I put one hand flat on top of the left side and the other on the right side, turning the roll counter clockwise and switching hands to keep going until the whole roll is twisted and easily turns into a circle. This second variety is shaped more like a fat pretzel. Maybe a little easier. I rolled the snake, shaped a lower case letter l, crossing one end over once again. Then I flipped the bottom part over onto the top part. Now for the recipe: Ingredients: 2/3 cup butter melted 2 cups warm milk 1 1/2 tsp salt 1/2 cup warm water for dissolving traditional yeast or just to add if using instant yeast 1 Tbsp yeast 1 Tbsp sugar 5 cups flour Method: Pour warm liquids, butter and salt into mixing bowl. Stir in 2 cups flour, then dissolved yeast mixture or instant yeast and sugar plus water. Add flour, stirring and kneading in the last bit to make a smooth dough. This can be mixed in a Kitchen Aid with a dough hook attachment or in a bread machine. Let rise on counter, away from draft, in a large bowl, covered with a tea towel and plastic bag for one hour. Pinch of buns and roll on counter into desired shapes. Yields 24 buns or Kringle. Let rise on greased pans for one hour. Bake at 400 F for about 18 minutes or until golden. Let cool on wire racks. Kringle are a beautiful addition to a meal, served with honey for coffee time or enjoy warmed up along with a cup of hot cocoa.
