Hallo Ihr Lieben Low Carb Brotliebhaber, jajaja, ich weiß. Ich hab schon beim letzten Brot gesagt, das ist ein wirklich gutes Brot. Aber dies hier ist auch ein wirklich gutes und sehr kerniges Brot und es hat sogar eine Knusperkruste. Also hier sind alle begeistert. Selbst der Teil der Familie, der nicht Low Carb isst, liebt es. Und das Beste: Die Zubereitung ist so einfach. Alle Zutaten mischen, backen, fertig. :) Leichter geht es kaum. Das Rezept habe ich übrigens hier gefunden und nur ganz leicht abgewandelt: Low Carb Kompendium. Eine super Seite mit vielen tollen Low Carb Rezepten. Schaut mal vorbei. :) Zutaten: 200 g gemahlene Mandeln 250 g Sonnenblumenkerne 50 g Flohsamenschalen gemahlen 50 g Leinsamen geschrotet 75 g Chia Samen 50 g Kerne nach Wahl (hier Mix aus Pinienkernen, Sesam und Kürbiskernen) 1 P (Weinstein-) Backpulver 1 TL Salz 30 g Kokosöl 450 ml handwarmes Wasser Zubereitung: Alle trockenen Zutaten in eine Schüssel geben und gut verrühren. Kokosöl ins warme Wasser rühren und schmelzen lassen. In die Schüssel geben und zu einem Teig verkneten. Mit feuchten Händen zu einem Laib formen und auf ein mit Backpapier ausgelegtes Backblech legen. Den Backofen auf 160 Grad vorheizen, das Brot solange ruhen lassen. Je nach Belieben mit einem Messer etwa 2 cm tief einschneiden und zusätzlich mit ein paar Körnern bestreuen. Im vorgeheizten Backofen bei 160-170 Grad Ober/Unterhitze etwa 90 Minuten backen. Das Brot ist fertig, wenn Ihr von unten dagegen klopft und es hohl klingt. Und natürlich gilt auch beim Low Carb Brot das Gesetz der ersten Scheibe! Unbedingt noch leicht warm mit Butter und Salz und wahlweise ein paar Kräutern essen. So gut. :) Genießen!
