Potrebno : za 30-tak šaumrola za tijesto 1/2 kocke svježeg kvasca među prstima, malo soli 1 šalica mlakog mlijeka 60 g šećera 1 jaje 1/2 kg mekog brašna 350 g maslaca ( sobne temperature) ili koristite gotovo lisnato tijesto (za bržu varijaciju) žumanjak za premazivanje za nadjev 3 bjelanca 70 g kristal šećera 60 g šećera u prahu 1 žlica soka svjeze iscjeđenog limuna šećer za posipavanje Postupak : 1 . Zamijesite lisnato tijesto, kvasac razlomite u manjoj šalici, dodajte prstohvat šećera i zalijte ga s malo mlakog mlijeka. Ostavite ga na toplom mjestu dok ne odreagira i stvori pjenicu. Brašno prosijte, napravite jamicu u sredini pa dodajte malo soli, dignuti kvasac, jaje, šećer i 150 g maslaca narezanog na tanke listiće. Tijesto dobro zamjesite da bude kompaktno i oblikujte kuglu. Ostavite ga 40-tak minuta na toplom mjestu da se odmori i digne se. 2 . Dignuto tijesto razvaljajte u oblik dužeg pravokutnika, pa do jedne trećine tijesta premažite ostatak omekšanog maslaca . Nenamazani dio tijesta preklopite prema sredini, a zatim i namazani dio po preklopu. Tako preklopljeno tijesto premjestite na prigodnu tacnu, prekrijte prozirnom folijom i ostavite 30-tak minuta u hladnjaku. nakon toga izvadite tijesto iz hladnjaka i ponovite postupak mazanja i preklapanja. 3 . Gotovo tijesto razvaljajte na pobrašnjenoj radnoj površini na debljinu 3 mm i na dužinu 30-tak cm. Nožem ili valovitim kotačićem za rezanje izrežite trake širine 2 cm. Koristite se kuhinjskim ravnalom. Pripremljene trake namotajte na kalupe, krajeve traka malo premažite žumancem kako bi se lijepo pričvrstile. Namotane kalupe slažite na lim od pećnice prekriven papirom za pečenje. Tijesto na kalupićima pecite u prethodno zagrijanoj pećnici na 190 C, 15-ak minuta. Tada otvorite pećnicu , izvadite na kratko kalupe i kistom ih premažite razmućenim žumancem. Dopecite još 3-5 minuta. Pečene role tijesta skinite sa kalupa i pustite da se potpuno ohlade. 4 . Za nadjev čvrsto stucite snijeg od bjelanjaka, malo po malo umiksajte i šećer, kristal i onaj u prahu. Na kraju umiješajte svježe iscjeđen sok od limuna. Još kratko izmiksajte. Pekarsku vrećicu sa zvjezdastim nastavkom napunite pripremljenim nadjevom od bjelanjaka, pa napunite ohlađene lisnate rolice. Prije samog posluživanja šaumrole pospite šećerom u prahu.
