I've based this recipe on the Hungarian version of scalloped potatoes, a casserole called rakott krumpli. It shouldn't be difficult to make potatoes, Hungarian or otherwise I really, really wanted to make this with kielbasa (I know it's not Hungarian), but was unable to find any with walking distance in Valladolid. I tried to substitute fresh chorizo even though the local stuff tends to turn into hard lumps if cooked too long. In addition, I cut the recipe in half

Fattoush is one of the most refreshing and flavorful Middle Eastern Salads you ever did try. It's made with fresh romaine, tomatoes, radishes, mint, parsley, and Persian cucumbers. To take it over the top, it's tossed and topped with crispy pita croutons and the most simple lemon and olive oil-based vinaigrette with a hint of sweetness from pomegranate molasses and runny honey- the latter completely optional. You're going to love the simplicity, the marriage of flavors, and that freshness-feel in every single bite. Perfect for hot summer days, or year-round. Bring this different salad to your next potluck or barbecue and watch it disappear.

You could easily substitute with feta (preferably soft Danish Feta) or if you prefer milder cheese, dollops of fresh mozzarella, bocconcini or fresh ricotta would work beautifully. Or leave the cheese out altogether if you're being truly virtuous!
