Deze sambal is het lekkerste met vers geraspte aardappel, maar bij tijdgebrek kun je ook de kant en klare aardappelstokjes kopen en deze verwerken. Ingrediënten: - 1 kg aardappelen - 2 rode uien - 5 teentjes knoflook - 4 rode lomboks (Spaanse pepers) - stukje verse laos - 2 salamblaadjes - 2 eetl gula jawa (palmsuiker) - zout Bereiding: - Schil de aardappels en rasp deze boven een grote kom met water in fijne reepjes. - Knijp de aardappels goed uit boven een zeef en droog ze zoveel mogelijk met een schone doek of keukenpapier. - Bak de geraspte aardappel krokant in de hete olie en laat ze daarna uitlekken in een zeef. - Wrijf de lombok fijn met wat zout. - Doe er de knoflook bij en wrijf deze ook fijn. - Snij de ui in dunne reepjes. - Verhit wat olie in de wok en bak hierin de ui tot ze gaat geuren. - Doe er de lombok-knoflook pasta bij en roer alles goed om. - Voeg de salamblaadjes en laos toe en laat deze meebakken. - Voeg dan de fijngesneden gula jawa toe en laat deze smelten. - Voeg zout naar smaak toe. - Laat het even zachtjes bakken tot de kruiden zijn ingetrokken en roer dan de gebakken aardappel er doorheen.
