It hasn’t snowed yet but the low temperature has caused the lotus pond to freeze and the adjoining birdbath looks like a massive piece of misshapen glass. Simple things in life keep us going and give much more happiness than the grander affairs. And happiness never comes in large doses. Small flecks of happiness are all around us. It needs a receptive soul to savour these. A rose finch peeping through a glass window is happiness. A Black Lored Tit flitting on the branches of the Cherry tree and letting out sonorous notes is happiness. We are the happiest people in the world when the Sun magically appears on a cold winter day, lifting spirits and letting rid of top layers of heavy clothing. For a moment, it feels that we are in Spring. It was a warm day yesterday and we baked bird-shaped bread rolls for dinner. Happiness is also the squeals of excitement let out by the kids as they shaped the birds with balls of dough. It became an interesting family project and in no time we had a tray of bird rolls ready in the oven. I kept the dough on the sweeter side. You may reduce the sugar. Use any bread dough that works for you. We got so excited with the shaping that we made the rolls twice. The first time, we made two birds and the next day, one bird. You may use whole wheat flour as well. In that case, you will have to increase the liquids. Bird rolls were enjoyed with hot soup. Bird Bread Rolls Ingredients 3 cups all-purpose flour/ whole wheat flour 1 teaspoon salt ½ cup milk + ½ cup water (more if required and 2-4 tablespoons more if using whole wheat flour) 2 teaspoons instant dry yeast 4 tablespoons unrefined sugar ¼ cup oil 2 tablespoons butter (to brush warm rolls) Few black raisins or choco chips for eyes A toothpick. Instructions In a large bowl, whisk flour and salt. Keep aside. Mix milk and water and heat it until warm. Add sugar and stir to dissolve. Add yeast. Mix and cover and let sit for 10 minutes. Add oil and mix. Add dry ingredients and stir until a shaggy dough forms. Transfer to the counter. Knead to get a soft and smooth dough. Add more water only if the dough feels very dry. Transfer to a greased bowl. Turn around once to coat evenly with oil. Cover and keep in a warm place to rise for 1 hour or until almost double. Punch and knead for 1-2 minutes. Let dough rest for 5-6 minutes. Pinch out small balls of dough. Roll out one ball at a time into a rope of about 6-8 inches in length. Now tie each roll into a knot from the center. Lift one free end of the knot and shape it into the birds head. Pull out the beak. Shape the head and beak. The other free end of the knot will be the tail. Flatten it with the index finger and press it with a fork to make feathers. You can also cut with a knife and shape the tail feathers. Arrange the rolls on a lined baking tray. Cover and keep in a warm place to rise for 30-45 minutes or until puffy. Preheat the oven to 180 degrees C. Bake for 20-25 minutes or until the rolls turn a beautiful golden. Transfer from the oven to the cooling rack. Brush warm rolls with butter. With a toothpick, make holes for eyes. Press a choco-chip / black raisin into the hole. Jedan od onih nezaboravnih recepata stare škole kuvanja. I opet samo par sastojaka, i opet ukus kolača koji se pamti! Eto zašto volim te starinske kolače... Čak se i količine namirnica lako zapamte! Potrebno je za goooomilu šapica: 3 jajeta 250 g šećera 250 g masti 250 g mlevenih oraha 500 g brašna +cca 50 g za posipanje 1/2 kašičice sode bikarbone i još... 50-tak grama prah šećera sa vanilom, za posipanje Pre nego što uopšte počenete da razmišljate o pripremi Šapica, morate nabaviti limene kalupiće za pečenje. Možete ih kupiti na pijaci, obično se na tezgama sa varjačama i ostalom kuhinjskom drvenarijom zature i ove male limene lepotice. Ili u nekim limarskim radnjama pored svakojakih plehova možete i njih pronaći. Meni je ove kupila svekrva na pijaci na Banjici, koštali su 15 dinara po komadu, kupila je one manje i one nešto veće, ali te veće nisam punila testom do kraja jer bi kolačići onda bili mnogo debeljuškasti i preveliki... dakle, preporučujem one manje. A s njima onda ima više posla... Takodje preporučujem da ih kupite bar 40-tak komada, koliko da se napuni jedan veliki pleh, što ih više imate, to ćete pre da završite s pečenjem! Penasto umutiti mast pa dodati jaja a zatim lagano i šećer. Mutiti da se šećer sasvim rastopi. Zatim umešati mlevene orahe. Dodavati prosejano brašno i sodu bikarbonu pa testo izručiti na radnu površinu i nastaviti s mešenjem dok ne utrošite svo brašno. Meni je trebalo malo preko pola kilograma, tačna količina zavisi od veličine jaja, kvaliteta masti a i samog brašna. Ono što je važno, testo treba da bude nežno, ne sme da se lepi za ruke, gustine kao za vanilice... sve standardno! Rernu zagrejati na 180C. Neko kalupiće premazuje s trunčicom ulja, ja ne. Testo u sebi sadrži već mast tako da je verovatnoća da se kolači neće vaditi iz kalupa bukvalno nikakva. Od testa otkidati loptice, "umakati" ih u brašno i puniti kalupe. Kao što sam već rekla, ako su kalupi veći onda ih puniti do pola. Pri pečenju kolači će još malo da narastu, biće divno trbušasti i debeljuškasti! Kalupe složiti u veliki pleh od rerne i peći kolače oko 15-tak minuta na 180C, gotovi su kad ivice blago porumene. Izvaditi pleh i ostaviti par minuta da se kolači ohlade a zatim ih izvrnuti iz kalupa. Možete ih uvaljati u prah šećer zamirisan vanilom ili ih posipati istim. Ja više volim kolače da pospem prah šećerom, tako se manje šećera zalepi za njih ;) Od ove mere dobićete baš puno kolača, tri pleha minimum, ali to opet zavisi od njihove veličine. I naravno, najbolji su kad odstoje nekoliko dana, držite ih u zatvorenoj kutiji. Uživaćete u divnim, prhkim kolačima koji se tope u ustima, nećete moći da im odolite uz kafu ili čaj, ma nećete moći da im odolite dokle god ih ima! Copyright by Vikend Kuvarica. Divan receptić naše drage Milice74 sa Coolinarike, ove breskvice su bez mleka i jaja, tako da ih možete praviti i u dane posta. Mekane su i prhke, dopašće vam se na prvi zalogaj!:)) Posne breskvice Sastojci (1 šolja= 2 dl): 1 šolja vode, 2 šolje ulja, 2 šolje šećera, oko 900 g brašna + 4 kašike brašna, 1 kesica praška za pecivo (2 kaf.kašičice) Fil: mrvice od izdubljenih breskvica, oko 2 dl ruma, 5-6 kašika džema od kajsija ili šljiva Dekoracija: malo prehrambene boje za kolače (aroma maline i kruške), kristal šećer Priprema: Pomešati vodu, ulje, šećer, 4 kašike brašna i prašak za pecivo (najbolje u dubljoj činiji) i ostaviti oko pola sata da odstoji. Zatim dodati preostalo brašno i zamesiti glatko testo. Odvajati po malo testa i oblikovati kuglice. Ređati ih na pleh preko papira za pečenje, ali ostaviti dosta razmaka jer će kolačići narasti tokom pečenja. Peći na 175 C oko 15-20 minuta, pazeći da ostanu svetle boje. Kad se kolačići prohlade, pažljivo ih izdubiti manjom kašičicom. Mrvice fino usitniti, preliti rumom i dodati džem od kajsija ili šljiva. Sve fino sjediniti. Pripremljenim nadevom puniti izdubljene kolačiće i spajati po dve polovine. U dve posudice sipati po šoljicu vode i dodati par kapi ekstrakta od maline i kruške. Kolačiće na kratko spustiti u boju, jednu stranu u crvenu boju a drugu u žutu, pa ih odložiti na kuhinjski papir. To uraditi sa 3-4 kolačića, pa zatim ih uvaljati u kristal šećer i ređati na ravan tanjir da se prosuše. Prijatno grickanje!:))

U mom kraju (valjevskom) zovu se upravo tako: Salašnjaci. Tradicionalni kolači premazivani mlevenim svinjskim salom imaju samo jednu manu: od početka pravljenja pa do krajnjeg proizvoda prodje par sati, ali u tih par sati vi im posvetite maksimalno tek oko 45 minuta vremena. Ostatak je čekanje i čekanje... i čekanje... al' neke stvari vredi čekati... Ovo je recept moje baba Ruse, koja mi inače nije baba. Nije mi ni rod. A i ja sam joj još uvek dužna zelenu zenanu kućnu haljinu s crvenim ružama koju je od sreće pocepala kad sam se rodila. Sastojci: 1 kašika masti po jedan prstohvat soli i šećera 1 limun, sok i kora 2 dl hladne vode 2 jajeta 2 žumanceta 1/2 dcl rakije (šljivovica) 650-700 g mekog belog brašna 200-250 g sala pekmez od šljiva prah šećer sa vanilom Nije moja baba Rusa imala običaj odvajanja mokrih i suvih sastojaka, nego ovako: Uzeti vanglicu za mešenje pa u nju sipati 1 veliku kašiku masti (vrhom punu, kao da sipate šećer a ne mast), prstohvat soli, prstohvat šećera, sok i koru od jednog limuna, 2 dcl hladne vode, rakiju (isključivo šljivovica), 2 cela jajeta i 2 žumanceta. Sve to malo propustiti kroz prste pa dodati cca 700 g mekog belog brašna. Količina brašna naravno zavisi od veličine jaja i limuna a i vaše sklonosti ka alkoholu, ali kao što je već dobro poznato, testo ne sme da se lepi za ruke. Testo mesiti jedno pet minuta kako bi proradio gluten iz brašna i kako bi postalo meko, glatko i elastično. Prekriti ga čistom suvom krpom i ostaviti ga na sobnoj temperaturi oko sat vremena da odmori. U medjuvremenu pripremiti salo: bitno je da je sa njega skinuta opna i uklonjene sve one sitne crvene žilice. Možete ga samleti na mašini za meso, u multipraktiku (par puta ga odvojiti od stranica) ili činiju sa salom i viljuškom uvaliti mužu u ruke s napomenom da mora da ga umuti tako dobro da salo bude penasto i lako mazivo. Kad je testo odmorilo, rasklagijati ga u pravougaonik debljine oko 1/2cm. Ravnomerno ga premazati tankim slojem sala i početi s preklapanjem. Prvo dužu stranu preklopiti do pola, pa premazati opet salom. Onda kraće strane presaviti do pola i premazati tankim slojem sala. Na kraju preklopiti testo kao knjigu i staviti ga na malo pobrašnjen tanjir, prekriti krpom i ostaviti u frižider da odmori 1 sat. Sve ovo ponoviti još dva puta - testo, dakle, treba da bude sve ukupno premazano 3 puta i treba da odmori 3 sata na hladnom. Samo sada nije potrebno testo razvuci na 5mm, kako se ne bi upropastili već napravljeni listići, već je dovoljno i na tek nešto malo manje od 1cm debljine. Kada je istekao i taj treći sat posle trećeg premazivanja, testo rasklagijati u pravougaonik i oštrim tankim nožem opkrojiti ga sa svih strana - inače se svi okrajci neće lepo razlistati. Iz jednog poteza seći testo na pravougaonike dimenzije 5x7 cm (kolač je onda taman za dva zalogaja) i na svaki u sredinu staviti jednu kašičicu pekmeza od šljiva (ili nekog drugog koji volite), pa kolač preklopiti na pola, bez ikakvog pritiskanja, spajanja ili lepljenja. Složiti na pleh obložen papirom za pečenje, ostavljajući mesta izmedju kolača jer će prilično da narastu. Rernu zagrejati na 250C. Na dno rerne staviti metalni tanjirić ili malu šerpicu s vodom koja će tokom pečenja kolača da isparava i tako imitira parnu rernu koja je inače idealna za pečenje svih vrsta lisnatog testa. Kolače stavite da se peku tek kad je rerna postigla temperaturu. Peku se oko 10-15 min, malo da porumene, ako je moguće bez otvaranja rerne (da se ne bi hladila, da kolači ne bi "spali", da para ne pobegne...). Ali zato uvek možete da skakućete oko šporeta, gvirkate kroz staklo i pevate: Rastite, rastite, kolačići rastite! Verujte da deluje. Pečene kolače ostavite da se prohlade u plehu pa ih pospite prah šećerom i vanilom. Tek sasvim hladne možete da redjate jedan na drugi. Neću vam govoriti da nije dobro jesti vruće testo jer me ionako nećete poslušati. Ali ću vam reći da je kombinacija pekmeza od šljiva, limuna, sala i šljivovice mnogo dobra.
