Ingredients: 4 C Flour (Whole Wheat, All-Purpose, Bread Flour, Spelt Flour, Rye Flour or a combination) 1/2 T Fine Sea Salt 2 T Honey 2 C Homemade Full-Fat Milk Kefir Directions: In a large bowl, mix together flour and salt. Pour in honey and 1 1/2 C of milk kefir. Add flour. Stir together using a sturdy wooden spoon until dough is sticky but pulls away from the sides of the bowl. Add more milk kefir as needed. On a well-floured work surface, knead dough 5-10 minutes or until soft and smooth, adding more flour as necessary. Transfer to an oiled bowl. Cover tightly with plastic wrap and leave on counter to ferment 12-24 hours. Punch down dough. Spray a standard-size loaf pan with non-stick spray. Place dough in greased loaf pan. Allow to rise in a warm place (or use "proof" setting on oven) until center of dough reaches the top of the loaf pan. Prehead oven to 350 degrees F. Bake for 45-50 minutes or until done. Fresh never dried organic kefir grains used as a kefir drink starter to milk kefir which is loaded with multiple benefits. Kefir grains / bulgaros are several microorganisms, specifically of bacteria and yeasts. The Kefir/ bulgaros are prepared when whole milk is added and as a result the kefir drink generated, a drink similar to yogurt which is lactose-free. All the steps from the start to the end of the fermentation process of the grains will be sent through the messages. Please Note: when the kefir grains are mailed to you, a total of one package of grains weighs up to 8.4gm, which is equal to two teaspoons by weight for one order; although milk is added to feed the grains during transit, they will be stressed without daily fresh milk. So they shrink and get smaller. The grains must be reactivated using fresh milk daily over a few days, preferably organic whole milk. You will need a fine mesh strainer (sieve) to collect the tiny grains. After the first 24 hours of fermentation, discard the milk and start a different batch. You must repeat this process a few times until the grains reach optimal health. Please begin with warm room-temperature whole milk at the beginning of the fermentation, and then you can switch to your favorite milk after the grains are fully activated to their optimum state.
