I'm a little more generous on the jam than typical recipes, and insist on baking the jam into the cookie rather than filling the dent in afterwards (it's just not the same!).I also insist on making this the traditional way using your thumb to make the dent (hence the recipe name Thumbprint Cookies). Use any flavoured jam you want, though strawberry and raspberry are popular choices (strawberry is pictured), apricot is also common.

With Valentines Day approaching, QJJ has you covered with this loved filled recipe.Go on give your loved one this Valentine's day a treat baked from the heart (literally!)Ingredients125g butter, softened1/3 cup caster sugar1/2 tsp vanilla essence1 egg yolk1 1/4 cups plain flour, sifted5 tbsp QJJ Raspberry Jam PreparationStep 1Preheat oven to 180°C. Grease 2 baking trays. Line with baking paper.Step 2Using an electric mixer, beat butter, sugar and vanilla until light and fluffy. Add egg yolk. Beat to combine. Add flour. Stir to combine.Step 3Roll 2 tablespoons of mixture into a ball. Repeat with remaining mixture to make 10 balls. Place balls 10cm apart on trays. Using the palm of your hand, flatten each ball to form a 7cm round, shaping edges to remove any cracks.Step 4Gently press a 5cm heart-shaped cutter into the centre of each round, being careful not to cut the whole way through. Using the tip of a small knife, scoop out the dough to make a heart-shaped indentation. Gently smooth indentation. Fill each heart with 2 teaspoons of QJJ Raspberry Jam, spreading out to edges. Now we say QJJ raspberry jam and a red jam would be best for valentines day but any Quincey Jones jam would work equally wonderfully.Step 5Bake for 15 to 20 minutes or until light golden. Cool on trays. Serve and watch the eyes light up in your sweethearts, whoever they may be!
