La Scacciata Catanese è una specialità siciliana, una sorta di pizza ripiena dall'Impasto Sottile e leggermente Croccante da farcire in tantissimi modi. La ricetta più diffusa è quella con Tuma, Acciughe e Olive che può essere arricchita con cime di Cavolfiore o Cipollotti. Ma, accanto a questa Variante, ne esistono tantissime altre. A seconda della stagione potrete preparare le Scacciate Catanesi con Melanzane, Spinaci, Salsiccia, Patate e via dicendo. Non dimentichiamo che le Scacciate, come le Scacce Ragusane, hanno origini contadine e, per farcirle, si usava ciò che si aveva a disposizione. La Ricetta della Scacciata Catanese è molto Facile e non richiese lunghi tempi di lievitazione. La ricetta originale prevede che l'Impasto venga preparato con lo Strutto anche se, in tempi più recenti, si preferisce usare l'Olio. Io ho provato entrambe le versioni e vi dico che è solo una questione di gusti. Con lo Strutto l'impasto viene un po' più Spesso e più Morbido, con l'Olio viene più Sottile e più Croccante, come piace a me!

Nel post dove vi parlavo della mia Pasqua vi raccontavo di una bella storia di amicizia che non ha conosciuto distanze ne tempo. Questa ricetta è messinese come messinese è Graziella, l'amica di mamma che li faceva ogni volta che si andava a trovare lei e la sua famiglia. Sofficissimi e buonissimi, i pitoni messinesi sono dei calzoni ripieni con scarola riccia, acciuga, caciocavallo e pomodoro. E in occasione del recente incontro la mia mamma si è fatta dare la ricetta per poterli rifare anche a Palermo. Ingredienti: mezzo chilo di farina 00, un pizzico di sale, un pizzico di zucchero, un cubetto di lievito di birra, 3 cucchiai di olio, acqua quanto basta. Per la farcitura: scarola riccia, cacio cavallo semi stagionato, pomodorini e filetti di acciuga. Con queste dosi vengono circa 9/10 pitoni. Procedimento: impastare il tutto lavorandolo bene a mano o in planetaria finchè l'impasto non sarà liscio, lucido, elastico e non si attaccherà alle mani. Formare dei panetti (10) gia' staccati, fare lievitare fino al raddoppio. Stendere i panetti col mattarello e formare dei dischetti, farcire con scarola riccia lavata e asciutta con un panno, un pezzetto generoso di caciocavallo, un pomodorino tagliato a fettine, un pezzetto d'acciuga. Chiudere il dischetto sigillando per bene i bordi. Fare lievitare ancora 10 minuti, non di piu' altrimenti si bagna la pasta sottostante al pitone e poi si hanno problemi durante la frittura. Friggere in abbondante olio di semi caldo e fate intiepidire prima di mangiare. A meno che non siete sadici e volete bruciarvi la lingua! E finalmente anche questa ricetta con i segreti della sua bontà è stata opportunamente "rubata e archiviata"...
