In january we had some lovely visitors from Sweden in our studio and we've been shooting a little video for AEG together. We've been asked to share thoughts about our view and about daylight and what makes it so inspiring.

La cucina medievale è una cucina povera fatta di ingredienti essenziali che si perde per la maggioranza delle sue ricette nei segreti dei conventi, sono loro, i monaci maestri di preparazioni, non elaborate ma semplici e squisite. MACCHERONI DEL PAESE DI BENGODI (Di Giovanni Boccaccio 1348) Uno dei testi fondamentali, in materia di storia della pasta asciutta, resta la novella di Calandrino (XI-3) del Decamerone. È là che si parla del paese di Bengodi dove « eravi una montagna di formaggio parmigiano grattugiato, sopra la quale stavan genti che niuna altra cosa facevano che far maccheroni e raviuoli, e cuocergli in brodo di capponi, e poi li gettavan quindi giù, e chi più ne pigliava più ne aveva ». Da tempo, seguendo anche gli studi linguistici-gastronomici, si discute sulla composizione di quei maccheroni. Quasi certamente – e lo confermano i libri di cucina di due secoli dopo e certe voci dialettali venete ancor oggi valide – si trattava di gnocchi: tra l'altro, solo quelli avrebbero potuto agevolmente rotolar giù dalle falde della rnontagna di parmigiano. Gnocchi, ovviamente, senza le patate (arriveranno dall’America quasi tre secoli dopo Boccaccio). Ci avvaliamo, per la ricetta, delle indicazioni di libri più « recenti »; in questo caso, dei Banchetti di Cristoforo da Messisbugo. Ingredienti (dosi per 4 persone): 200 g di farina bianca, 100 g di semolino macinato sottile, 5 uova, sale, 1 l di brodo di pollo e manzo (indispensabile), 100 g di formaggio grana grattugiato, 50 g di burro. Esecuzione: Setacciare insieme la farina e il semolino. Metterli « a fontana », aggiungere le uova, il sale e ottenere un impasto non troppo duro. Nel caso, aggiungere o altra farina o acqua (tutto dipende dalla grossezza delle uova e dalla « forza » della farina). Ridurre l'impasto in cordoni, tagliare dei pezzi « quanto una castagna » e modellarli « sul rovescio del grattacasio (1a grattugia) ottenendo degli gnocchi a forma di conchiglia. Se piacciono, ricorrere agli gnocchi freschi venduti in buste: questi prodotti industriali, che si valgono più di semola e farina che di patate, sono i più « vicini » alla ricetta di quattrocento anni fa. Mettere al fuoco, in una pentola larga, il brodo: deve essere quanto più ricco è possibile e persino grasso, in quanto spetterebbe ad esso insaporire gli gnocchi. Quando il brodo bolle, calarvi, un po’ alla volta, gli gnocchi. Toglierli, con il mestolo bucato, appena salgono a galla e disporli in un piatto da portata ben caldo, cospargendoli, di volta in volta, con il formaggio grattugiato, e nient’altro. Farli rotolare in ungo un piano inclinato cosparso di formaggio sarebbe prova di rispetto per Boccaccio, ma anche operazione poco agevole. Solo al momento di servire, cospargere il piatto con il burro fuso. Servire caldissimi. Osserviamo, incidentalmente, che tutte le paste al burro sono migliori se si condiscono prima con il solo formaggio, poi con il burro, sciolto o anche in pezzetti.
