Homestyle - Chicken, Spinach, and Mushroom Bake Creamy Chicken Bake with Spinach and Mushrooms Ingredients: 4 boneless, skinless chicken breasts 2 cups fresh spinach, chopped 1 cup mushrooms, sliced 1 cup cream of mushroom soup 1/2 cup sour cream 1 cup shredded mozzarella cheese 2 cloves garlic, minced 1 tablespoon olive oil 1 teaspoon Italian seasoning Salt and pepper to taste Directions: Preheat oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, or until they are tender and have released their moisture. Stir in the chopped spinach and cook for an additional 2-3 minutes, until wilted. Remove from heat and set aside. In a mixing bowl, combine the cream of mushroom soup, sour cream, Italian seasoning, salt, and pepper. Mix well. In a greased baking dish, place the chicken breasts in a single layer. Spread the mushroom and spinach mixture evenly over the chicken. Pour the creamy mixture over the top, ensuring the chicken is well coated. Sprinkle the shredded mozzarella cheese on top. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden. Prep Time: 15 minutes
