Many of what are called the 'new' bistros of Paris are actually just restaurants with hip young chefs painting plates with a straight line of sauce, adding some powdered radishes and a shiso leaf next to pieces of pork belly, or doing the 'line-up' of food (ie: a smear of root vegetable puree down the center of the plate, with herb leaves, flowers, a dice of vegetables,

Hearth & Dram in downtown Denver is a whiskey lover's heaven. Located alongside the Hotel Indigo, the high-ceilinged bar stocks more than 420 whiskies, has local Leopold Bros. Whiskey on tap, and makes some truly exciting cocktails. The best part? It’s constantly growing. Since opening in January 2017, Hearth and Dram has been expanding its collection and grown its staff of knowledgeable cocktail professionals in all the right ways. There are few things to toast the local flavor of Denver better than the Cherry Bobomb. “Although it’s a cherry-flavored cocktail, it’s not overly sweet and the Chartreuse really brightens it up,” bartender Addison Blyeth tells me. “We don’t like overbearing sweet things here, and it’s not that. There’s herbal qualities and bitterness, and the sage garnish is a great addition.” It’s hardy enough to stand up to Denver's winter, refreshing enough to brighten up a summer afternoon, and perfect for any time of day.

Appearing widely in our research for this dish, the following rhyme is a neat summary of Burmese cookery: ‘Of all the fruit, the mango is best; of all the meat, pork is best; and of all the leaves, lahpet’s (fermented tea leaf) the best.’ Mango is used in this pork curry to add flavour and to help tenderise the meat, while shredded green mango also makes a piquant accompaniment as a salad. Often flavoured with ground dried shrimp, shrimp paste and fish sauce, it provides a wonderfully salty-sour counterpoint to the rich pork.
A wat or wot (what?) is an Ethiopian stew. I first read about Ethiopian cuisine on The Taste Space and I knew I had to try it out for myself. It is spicy, which I love as you might have guessed and…
Whether you’re planning a low-key holiday meal or sneaking in a midweek dinner date amid other holiday plans, put these tender pork chops glazed with brown sugar on your list. It’s one of those dishes that is so easy and so simple, and yet feels like a special feast all its own. A quick brine is one of my favorite ways to add flavor to thin cuts of meat like pork chops and also ensure that they stay juicy and tender during cooking.
In most polite circles, the union of fish and cheese has long been frowned upon. But, _mi dispiace_, Italian friends—it's time to reconsider this taboo pairing. The dish, as comforting as a hug and a roaring hearth on a rainy Dublin day, is all the convincing we need.
Skillet Baked Huevos Rancheros. One of my favorite breakfast dishes. Super easy, delicious and healthy too! This dish is actually my family's traditional Christmas morning breakfast. I am a huge fan of chicken wings, although I am not a big fan of Buffalo wings. I think the best part of the chicken outside of the two oysters is the wing. Wings have loads of flavor and lots of crispy skin. It is a good ratio. I have adapted a recipe from Naomi Duguid's Burma book and made her Shallot Lime Chutney into a marinade/salsa combo. It works well and I really like the way the shallots get all schmaltzie when they cook in the chicken fat.
Bacon Wrapped Dates Stuffed with Cabrales Cheese Here is a simple tapas that will pair well with any tasty red or white wine. The exact quantity of dates, bacon and Cabrales (Spanish blue cheese) depends on how many stuffed dates you need. Figure at least two, per person, if pairing with other tapas. You can substitute Monchego for the Cabrales cheese or Serrano ham for the bacon. These tapas are delicious in all these variations. Medjool Dates, slit open and pit removed Sliced Bacon , 1/2 slice per date Cabrales cheese (Spanish blue cheese) Preheat oven 425 degrees Stuff the inside of the dates with the Cabrales cheese. Wrap each stuffed date with a half slice of bacon. Overlap edges of bacon and secure with toothpick. Line up each on baking sheet with edge side down. Bake in oven for about 8-12 minutes until bacon is golden and crisp. Remove dates from oven and place on paper towel to absorb excess fat. Serve within 5-10 minutes while still warm. I would pair these with the delicious 2007 Bodegas Ateca Garnacha de Fuego. Yum.
