Die von mir in Lousiana verkosteten Gumbos waren was Farbe, Geschmack, Zutaten und Konsistenz betrifft, sehr unterschiedlich. Das Rezept unten ist daher eher als Anregung zu sehen und kann gerne abgewandelt werden. Drei Gemüsesorten sollten aber nicht fehlen: Zwiebel, Staudensellerie und Paprika (meist grün). Was das Fleisch betrifft, ist alles erlaubt: Fast obligatorisch ist aber die Zugabe von Andouille, einer geräucherten Wurst aus Schweinefleisch. Jegliches Geflügel oder Meerestiere sind ebenfalls oft in einem Gumbo zu finden, auch Rindfleisch wird verwendet, benötigt aber wesentlich länger zum Kochen. Für Gumbos werden übrigens nicht die Filetstücke verwendet – Truthahnhals oder Ochsenschwanz tun es vollkommen (ich halte es im Rezept unten nicht ganz so authentisch). Zum Servieren wird Gumbo häufig mit gehackter Petersilie oder Frühlingszwiebelgrün bestreut. Ein Muss ist weißer Reis als Beilage. Dieser kommt zuerst auf den Teller, dann erst wird mit Gumbo aufgefüllt.
