Um den Frühling nu restlos zu locken haben Herr V und ich gestern unsere Terasse sommerfit gemacht. Hinter viel Prüll und Kram, der sich über den Winter da angesammelt hat, kam nach einer Weile auch unser Grill zum Vorschein. Herrn V´s Augen leuchteten kurz sehnsuchtsvoll und er fragte dann, ob der Metzger schon zu hätte... Hatte er natürlich. Leider. Ich hätte auch nix dagegen gehabt, den Frühlingsanfang ordentlich anzugrillen. Während mein lieber Mann draußen noch ein wenig den Putzlappen schwang, kam ich auf die Idee, wenigstens ein bißchen von unserem üblichen Grillgeschmack an den Esstisch zu zaubern. Sozusagen als Vorgeschmack. Diese Brotzwirbel sind wirklich kinderleicht herzustellen und sie sind unglaublich vielfältig! Von Pesto über Sesam, einfach nur Fleur de Sel, Haselnüsse, Zimt und Zucker und Schokolade hatte ich da schon alles drin! Aber so richtig "grillig" schmecken sie uns am besten mit der hier schon erwähnten Pasta-Gewürzmischung, die ich mit ein wenig Olivenöl angerührt habe. Im Sommer kann man sie schon am Mittag wunderbar vorbereiten und dann abends nur nochmal zum wieder-knusprig-werden auf den Grill schmeißen. Zutaten für ca. 20 Stück Teig 500 g Mehl 1 Paket Trockenhefe (oder natürlich frische, dann 1 Würfel) 1 TL Salz 350 ml lauwarmes Wasser Füllung 2 EL Olivenöl 1 geh. EL Gewürzmischung Für den Teig alle Zutaten mit den Knethaken vom Mixer ungefähr 5 Minuten gut durcharbeiten, bis der Teig blasen wirft. Dann abdecken und an einem warmen Ort ca. 1 Stunde gehen lassen. Ich heize dafür beim Kneten schon immer meinen Ofen auf 50°C auf, stelle dann die Schüssel hinein, schalte den Ofen aus und stecke einen Holzlöffel in die Tür, damit es nich zu warm wird. Wenn der Teig sein Volumen ungefähr verdoppelt hat, gibt man ihn auf eine gemehlte Arbeitsfläche und drückt ihn behutsam mit den Fingern zu einem 1 cm dicken Rechteck. Nun kommt die wie auch immer geartete Füllung drauf. In unserem Fall gestern habe ich das Öl mit der Gewürzmischung verrührt und das ganze schön gleichmäßig (mit die Finger!!! :) ) auf der Teigplatte verteilt. Dann das rechte Drittel der Platte nach links zur Mitte hin falten. Das linke Drittel nach rechts darüberlegen und alles leicht andrücken. Das Ganze um 90 Grad drehen und mit einem scharfen Messer ungefähr 1 cm breite Streifen abschneiden. Diese werden ein paarmal verzwirbelt und dürfen nochmal 10 Minuten gehen; bis der Ofen auf knackige 250 °C aufgeheitz ist. Ein Backblech sollte dabei schon in der unteren Schiene stecken. Nu verfrachtet man die Zwirbelchen nur noch in den Ofen und sieht zu, wie sie innerhalb von ungefähr 10 Minuten goldbraun und knusprig werden. So Frühling. Terasse sauber, halt dich ran jetzt! Wir wollen grillen!!!!! :)
