Obrane jaja przekładam do miseczki i rozgniatam dokładnie widelcem, dodaję majonez, jogurt naturalny, przyprawy oraz posiekany drobno koperek. Całość mieszam, przed podaniem wstawiam do lodówki na ok. 30 minut. Pastę przechowuję w lodówce w szczelnie zamkniętym pojemniku, świetnie smakuje także na drugi dzień kiedy smaki dokładnie przegryzą się. *** Pasta z pieczonej marchwii i słonecznika 5 marchewek 1/2 szklanki słonecznika 2 łyżki jogurtu naturalnego oliwa z oliwek pieprz sól wafle ryżowe Marchew myję, obieram, skrapiam oliwą z oliwek i zawijam w folię aluminiową. Ja korzystam z pomocy blendera więc do awokado dodaję przeciśnięty przez praskę czosnek, odrobinę jogurtu naturalnego oraz przyprawy i miksuję całość na jednolitą, aksamitną pastę. *** Pasta jajeczna z wędzoną makrelą i ogórkiem kiszonym 1 wędzona makrela (ok. 200 g) 3 jaja 3 ogórki kiszone kilka gałązek szczypioru 1-2 łyżki majonezu 1-2 łyżki jogurtu naturalnego świeżo mielony pieprz sól Makrelę oczyszczam z ości, rozdrabniam na mniejsze kawałki i przekładam do miseczki. Jaja ugotowane na twardo ścieram na tarce o grubych oczkach, ogórka kiszonego kroję w kostkę, a szczypior drobno siekam. Wszystkie składniki mieszam ze sobą, dodaję majonez i jogurt naturalny w takich proporcjach, aby konsystencja pasty odpowiadała naszym preferencjom, na koniec doprawiam solą oraz pieprzem, ponownie mieszam. *** Pasta z zielonej soczewicy 1 szklanka zielonej soczewicy 1 cebula 1/2 łyżeczki kurkumy 1/2 łyżeczki czosnku granulowanego szczypta soli świeżo mielony pieprz 1 łyżka oliwy z oliwek Soczewicę przepłukuję pod zimną wodą, następnie przekładam do miski, zalewam zimną wodą (ok. 2 szklanki) i pozostawiam do namoczenia na 4-6 godzin, a najlepiej na całą noc. Następnego dnia soczewicę przekładam do garnka wraz z wodą w której się moczyła i doprowadzam do zagotowania. Od czasu do czasu mieszam, aby nie przywarła do dna garnka. Soczewica jest gotowa kiedy wchłonie całą wodę i jest miękka, u mnie trwało to ok. 30 minut. Cebulę kroję w drobną kostkę i podsmażam na niewielkiej ilości oliwy z oliwek. Do misy blendera przekładam ugotowaną soczewicę, cebulę, dodaję do smaku przyprawy i miksuję całość, aż do uzyskania jednolitej konsystencji. (Gdyby była zbyt gęsta można dodać trochę oliwy z oliwek) *** Pasta z zielonego groszku 2 szklanki zielonego groszku (mrożony lub z puszki) 1-2 ząbki czosnku 2 łyżki majonezu 1 łyżka jogurtu naturalnego szczypta soli świeżo mielony pieprz opcjonalnie inne ulubione przyprawy lub świeże zioła Groszek gotuję do miękkości, następnie odcedzam i pozostawiam do ostygnięcia. Przekładam groszek do misy blendera, dodaję czosnek przeciśnięty przez praskę, przyprawy oraz majonez i jogurt. Całość miksuję na jednolitą pastę, w razie potrzeby doprawiam jeszcze do smaku. Pastę przed podaniem schładzam w lodówce, podaję ze świeżym pieczywem. *** Awanturka (pasta z sardynek i twarogu) 1 puszka sardynek w oleju 250 g twarogu półtłustego kilka gałązek szczypioru świeżo mielony pieprz sól 2 łyżki majonezu 1-2 łyżki gęstego jogurtu naturalnego lub kwaśnej śmietany 12% Sardynki odsączam z zalewy i drobno siekam, następnie wraz z twarogiem przekładam je do głębokiego talerza i rozgniatam widelcem. Dodaję posiekany drobno szczypior, przyprawy do smaku, majonez i jogurt w takiej ilości, aby konsystencja pasty nam odpowiadała. Całość dokładnie mieszam, wstawiam pod przykryciem do lodówki, aby składniki przegryzły się. *** Hummus (pasta z ciecierzycy) 1 szklanka suchej ciecierzycy 1/3 szklanki pasty tahini (przepis TUTAJ) ok. 1/2 szklanki zimnej przegotowanej wody sok z 1/2 cytryny 2-3 ząbki czosnku 1/2 łyżeczki kuminu (kmin rzymski) pieprz, sól dodatkowo: kilka łyżek oliwy z oliwek/oleju roślinnego posiekana natka pietruszki czerwona słodka papryka Ciecierzycę moczę przez noc w dużej ilości zimnej wody, następnie płuczę ją, zalewam ponownie dużą ilością zimnej wody i gotuję do miękkości. Zazwyczaj trwa to ok. 60-90 minut. Cieciórkę solę do smaku dopiero pod koniec gotowania, następnie odcedzam ją i pozostawiam do ostygnięcia. Ciecierzycę przekładam do blendera kielichowego, dodaję tahinę, sok z cytryny i przeciśnięty przez praskę czosnek. Miksuję całość, stopniowo dolewając wodę. Ważne jest, aby robić to stopniowo gdyż ilość wody wyznacza Nam konsystencję pasty. Na koniec doprawiam do smaku solą, pieprzem oraz kuminem. Całość miksuję bardzo dokładnie na gładko, w razie potrzeby dodaję cały czas niewielką ilość wody. Gotowy hummus przekłam do miseczki, dekoruję dużą ilością oliwy, natką pietruszki i czerwoną słodką papryką. Podaję ze świeżymi warzywami pokrojonymi w słupki, nachosami albo ciemnym pieczywem. Hummus można przełożyć także do słoiczka, skropić solidnie oliwą i przechowywać w lodówce do kilku dni. Green Onion/Scallion Pancake After reading Use Real Butter's post on green onion/scallion pancake and discovered the ease of making it, I wanted to make it for lunch. I told JSB about it and she gave me the "I-Don't-Care" for it look and said she only wanted one pancake. But you know what? She LIED BIG TIME! She ate two and left me only one, which is why there's a picture of only one pancake... I had to make the pancakes another time for a more balanced photo. (see below). Cut into quarters. Easy Green Onion Pancake Recipe from Use Real Butter Servings: 3 small pancakes Note: I halved the original recipe. Ingredients: 1 cup flour 1/4 cup warm water 2 stalks of green onion, finely chopped vegetable oil salt Directions: Make the dough, Method 1: Place the flour in the work bowl of a food processor with the dough blade. Run the processor and pour the warm water in until incorporated. Pour the contents into a sturdy bowl or onto a work surface and knead until uniform and smooth. The dough should be firm and silky to the touch and not sticky.[Note: it’s better to have a moist dough and have to incorporate more flour than to have a dry and pilling dough and have to incorporate more water). Make the dough, Method 2 (my mom’s instructions): In a large bowl mix flour with 1/4 cup of water and stir until water is absorbed. Continue adding water one teaspoon at a time and mixing thoroughly until dough pulls away from sides of bowl. We want a firm dough that is barely sticky to the touch. Both dough methods: Knead the dough about twenty strokes then cover with a damp towel for 15 minutes. Take the dough and form a flattened dome. Cut into 3 pieces of equal size. Roll the pieces into balls. Place a ball of dough on a well-floured work surface and roll out into a thin circle (about 1/16th inch thickness). Spread a teaspoon of oil (I used sesame oil) evenly over the pancake (use more if needed). Sprinkle salt evenly over the pancake. Sprinkle 1-2 tablespoons of scallions over the pancake. Roll the pancake up from one end like a rug, then curl the roll around in a spiral and pinch the end to the roll so it stays wrapped. With the palm of your hand, press the roll from the top to flatten it. Roll the pancake out to 1/8th inch thickness. Heat a tablespoon of oil on a flat, wide pan over a medium-low to medium flame until hot. Set the pancake in the oil and let fry until the bottom is crisp and golden. Flip the pancake, adding more oil as needed. Remove from heat and serve immediately or reheat in the oven.

If you’ve been following along for a while, you may remember this post, but I’ve been getting a lot of French seam questions lately so I figured it wouldn’t hurt to resurrect this tutorial from the blog archives and set it free a second time. I’m first going to do a run through of the french seam and then will show you how to apply it to the armhole. Just a few notes before we begin… 1. french seams are usually best used on light to medium weight fabric. 2. French seams require you to split your seam allowance in two parts. This tutorial is done using a 1/2″ seam allowance, but if you are working with a 5/8″ seam allowance, sew the first seam at 3/8″ and the second at 1/4″. I’ve tried to notate where this applies. With that, lets get to it! Click through to view the tutorial. French Seams on Straight Seams Step 1 | Cut your pieces from your fabric. I only made a half top for this so photographing would be easier, but yours will look normal of course. Step 2 | Sew the sides and shoulder seams with the wrong sides of the fabric together at 1/4″ (or 3/8″ if you have a 5/8″ seam allowance) and press the seam open. I like to do all of the seams at once instead of completing one seam at a time because you are much less likely to end up with one seam backwards. Step 3 | Grade your seam allowance down to 1/8″. Step 4 | Fold and press along the seam so that the right sides are together and stitch at 1/4″. Step 5 | Press both the side seams and shoulder seams towards the back of the garment and this part of the process is over! French Seaming Armholes (and other curved seams) Step 6 | First we will assemble the sleeves, this part is a bit repetitive. Sew the underarm seams with the wrong sides of the fabric together at 1/4″ (or 3/8″ if you have a 5/8″ seam allowance). Step 7 | Press the seam open and grade the seam allowance down to 1/8″. Step 8 | Fold and press along the seam so that the right sides are together and stitch at 1/4″. Press seam towards back of sleeve. Step 9 | Sew a line of gathering threads from the front notch to the back notches. Step 10 | Pin your sleeve and armhole together with wrong sides facing. Begin by matching the underarm seams and notches. Step 11 | Pull on your gathering stitches to ease the sleeve cap into the armhole. Stitch around the seam at 1/4″ (or 3/8″ if you’re working with a 5/8″ seam allowance). After sewing this seam, check for any tucks and remove them if you have any. Step 12 | Press the seam open and grade the seam allowance down to 1/8″. This will be most easily accomplished by cramming a ham or sleeve roll inside your shirt and pressing the seam around that. Step 13 | Fold and press along the seam so that the right sides are together and stitch at 1/4″. Check for any tucks and correct those if you have any. You should now have a french seamed armhole like the one below, congrats! And that’s that!
