Il y a quelques jours, je me suis dépêchée de prendre en photo le gâteau que je venais de préparer. Le gâteau était encore tiède... Le sucre glace fondait dès que je le saupoudrais dessus. Les parts ne se coupaient pas très bien. Mais, il m'était impossible d'attendre plus longtemps pour le goûter. Ce jour-là, j'avais une furieuse envie de gâteau au chocolat. Quand j'ai partagé cette photo sur mon compte Instagram, je ne m'attendais pas à ce qu'elle vous plaise autant. Toute cette gourmandise vous avait donné faim. Je vous avais promis de partager la recette très vite. Après quelques jours bien chaotiques par ici, je suis tellement contente que la vie reprenne un cours normal. Et voilà donc la recette de ce gâteau au chocolat. Il s'agit d'une torta caprese, gâteau originaire de Capri. Sa particularité est de contenir des amandes en poudre, et pas de farine. Le résultat est divin. Et aussi bien le jour-même encore un peu tiède que le lendemain. On prendra la précaution de passer les amandes au four afin de les torréfier légèrement. Le reste de la recette est tout ce qu'il y a de plus simple. Si comme moi vous souhaitez un gâteau peu cuit au centre, il faudra le laisser cuire peu de temps. Il est possible de le laisser un peu plus dans le cas contraire. Dans tous les cas, je vous encourage à vous laissez tenter par ce gâteau. C'est une vrai régal à chaque bouchée. Torta caprese: 200 g d'amandes en poudre 200 g de chocolat 70% 160 g de beurre mou 140 g de sucre blond 4 œufs Préchauffer le four à 160 °C. Répartir la poudre d'amande dans un plat et la faire torréfier pendant 5 à 7 minutes, en remuant à mi-cuisson. Laisser refroidir. Monter la température du four à 18O°C. Faire fondre le chocolat au micro-onde par tranches de 30 secondes. Remuer à chaque fois. Laisser tiédir. Dans le bol du robot, battre le beurre mou et 90 g de sucre jusqu'à avoir un mélange homogène. Ajouter un jaune d’œuf et continuer de battre pendant 1 à 2 minutes. Faire ainsi avec les 4 jaunes. Ajouter les amandes puis le chocolat. Mélanger. Monter les blancs en neige. Quand les fouets commencent à laisser des traces, ajouter le sucre restant en plusieurs fois tout en continuant de battre. Ajouter les blancs montés à la pâte, délicatement à la spatule. Verser la pâte dans un moule ou un cercle de 19 cm. Faire cuire pendant 25/30 minutes. A 25 minutes, le résultat est fondant comme ici. Si vous voulez moins fondant, il faudra le laisser un peu plus longtemps. Laisser refroidir. Saupoudrer de sucre glace. Réserver à température ambiante. Pour finir: pour avoir un moule à la bonne taille, j'utilise un cercle réglable que je pose sur une feuille de cuisson en silicone. Ce genre de cercle se trouve très facilement pour quelques euros. Et franchement, c'est un très bon investissement. Adaptez le temps de cuisson à votre moule.

Achieving a crispy crust and a tender interior on a gluten-free pizza was no easy feat. First, we developed a gluten-free flour blend that mimicked many of the properties of wheat flour: white rice flour for starch, brown rice flour for wheaty flavor, potato starch for tenderness, tapioca starch for spring and stretch, and milk powder for browning and structure. To mimic the gluten in wheat flour, we used a small amount of ground psyllium husk. To create a tender, airy, open crumb, we significantly increased the water in the dough and then gently parbaked the crusts in order to drive off the excess moisture once it had served its purpose. Finally, we added a small amount of ground almond flour to introduce fat and increase crispiness without leaving the crust greasy.
