Le Colombo est une sorte de curry antillais qui peut être réalisé soit avec du poulet, soit avec du porc. Dans cette recette, les épices, indissociables de la cuisine créole, ont agit, comme par magie, et le miracle s'est produit .. De toute évidence, le dosage des épices demande un peu de savoir-faire, alors je suis allée chez Minouchka chercher sa recette "authentique" et ses précieux conseils et je la rejoins totalement sur deux points importants dans la réussite de ce plat : - la durée de marinade .. dans l'idéal, une nuit, ce qui rendra la viande plus tendre et parfumée (et qui vous permettra de prendre un peu d'avance sur le lendemain). - et surtout, ne pas oublier de faire roussir les graines. (Les graines à roussir développent en particulier leur parfum lorsqu'elles sont légèrement grillées à sec). A cela, je rajouterais : utiliser des épices et une volaille d'excellente qualité. Ingrédients : 1 beau poulet (fermier, de préférence) 3 pommes de terre moyennes 2 gousses d'ail 4 brins de ciboulette (ou 1 botte de cives) 1 gros oignon 4 cs de poudre de colombo 1 cs de graines à roussir (mélange de cumin, fenugrec et moutarde jaune) thym frais ou séché 4 clous de girofle 2 feuilles de laurier quelques brins de persil 1 citron vert 1 piment antillais sel et poivre Pour la marinade : 2 gousses d'ail, sel, poivre, 2 cc de poudre de colombo, 4 cs de vinaigre, 2 clous de girofle, 2 feuilles de laurier, piment Découper le poulet en morceaux. Le rincer une première fois dans de l'eau vinaigrée afin de retirer l'excès de gras. Ecraser légèrement la tête des clous de girofle afin que l'épice dégage toute sa saveur. Faire mariner dans les ingrédients cités plus haut. Le temps de marinade varie entre 1 heure à 1 nuit. Faire revenir à sec dans une sauteuse ou une cocotte, les graines à roussir. Ajouter l'huile, la ciboulette (ou les cives), l'oignon coupé, les clous de girofle, l'ail écrasé, le thym et le laurier. Ajouter les morceaux de poulet et faire revenir en remuant de temps en temps. Ajouter la poudre à colombo (4 bonnes cs) et bien remuer. Ajouter de l'eau (dont la marinade du poulet), le persil. Couvrir et laisser cuire 15 à 20 mn. Couper les pommes de terre en petits morceaux et les ajouter au poulet. Couvrir (ajouter un peu d'eau s'il le faut, juste pour couvrir les légumes et le poulet) et laisser cuire à feu moyen pendant 20 à 25 mn). Dès que les légumes sont légèrement fondants et que la sauce commence à épaissir et à se décoller facilement de la sauteuse, c'est prêt ! En dernier, arroser de jus de citron. Servir avec du riz nature.
