Uma espécie de massa folhada mas com menos camadas: são camadas de manteiga e açúcar, que ao irem ao forno têm um aspecto e textura semelhantes à massa folhada, cobertas de açúcar caramelizado. A receita tem origem na Bretanha e é uma especialidade da cidade de Douarnenez em Finisterra. O nome, “Kouign amann”, deriva das palavras Bretãs para bolo ("Kouign") e manteiga ("amann"). Tradicionalmente é feito um bolo grande, mas nos últimos anos começa a ser comum ser feito em bolos individuais, muitas vezes referidos como “Kouignettes”. Existem várias receitas destes pequenos bolos, mas nesta Edd Kimber utiliza uma massa de croissant a que adiciona açúcar, e embora não sendo difícil de fazer, exige alguns cuidados, de forma a obter o aspecto folhado e caramelizado. Obtém-se o máximo de sabor e textura se forem consumidos no próprio dia. Acreditem, vale a pena o esforço! Adaptado de / Adapted from: Patisserie Made Simple Edd Kimber Kyle Books, 2014 {scroll down for english version} Ingredientes (para 10) 60 ml de leite gordo, morno 60 ml de água, morna 125 g de farinha de trigo T55, mais um pouco para polvilhar 125 g de farinha de trigo para pão, T65 7 g de levedura seca 150 g de açúcar, mais um pouco para polvilhar ½ colher de chá de sal 225 g de manteiga sem sal, gelada Preparação 1. Coloque o leite e a água numa tigela média e misture, e em seguida, reserve. Coloque as farinhas, o fermento, 30 g do açúcar e o sal na taça de um processador e pulse para combinar. Corte 125 g de manteiga em pedaços pequenos, com cerca de 1 cm de tamanho. Adicione ao processador e pulse, uma ou duas vezes, apenas para misturar. Esta é a fase mais importante: se a manteiga ficar demasiado misturada com a farinha, a massa não irá expandir enquanto coze. Se não conseguir ver pedaços de manteiga na massa, é porque foi demasiado processada. 2. Deite a mistura de farinha e manteiga no líquido e, usando uma espátula, envolva os ingredientes secos no líquido, tentando combinar tudo sem que os pedaços de manteiga diminuam de tamanho. Depois de ter formado uma massa grosseira, coloque-a numa superfície de trabalho e trabalhe-a muito levemente até formar uma bola de massa. Forme um retângulo plano, embrulhe em película aderente e leve-a no frigorífico por 45 minutos. 3. Enquanto isso, coloque a restante manteiga no congelador para arrefecer completamente (precisa de ficar bem dura). 4. Estenda a massa sobre uma superfície de trabalho levemente enfarinhada, formando um retângulo com cerca de 15x45 cm, com o lado mais estreito virado para si. Retire o excesso de farinha da superfície da massa. Retire a manteiga do congelador e rale-a grosseiramente sobre os dois terços inferiores da massa. 5. Pré-aqueça o forno a 190 °C (170 °C se for forno ventilado). Coza durante 20-25 minutos, até que fiquem dourados e o açúcar caramelizado. 9. Retire do forno e retire os aros de tarte, se os tiver usado, ou desenforme das formas de muffins e deixe os bolos arrefecer no tabuleiro. Sirva-os à temperatura ambiente, quando o açúcar no exterior tiver adquirido uma textura mais crocante. There are several recipes of these small cakes, but this Edd Kimber’s recipe uses croissant dough to which he adds sugar, and although it’s not difficult to do, requires some care in order to obtain the puff and caramelized appearance. To find the maximum flavor and texture they should be served on the day they are made. Ingredients (serves 10) 60 ml whole milk, lukewarm 60 ml water, lukewarm 125 g plain flour, plus extra for dusting 125 g strong white bread flour 7 g fast-action dried yeast 150 g caster sugar, plus extra for dusting ½ tsp salt 225 g unsalted butter, chilled Preparation 1. Put the milk water in a medium bowl and mix to combine, and then set aside. Put the flours, yeast, 30 g of the sugar and the salt into the bowl of a food processor and pulse to combine. Dice 125 g of the butter into small pieces, about 1 cm in size. Add to the food processor and pulse once or twice just to mix together. This is the most important stage: if the butter is mixed too much into the flour, the dough won’t expand and puff up as it bakes. If you can’t see chunks of butter, you have processed the dough too much. 2. Tip the butter and flour mixture into the liquids and, using a spatula, fold the dry ingredients into the liquid, trying to combine everything without making the butter pieces any smaller. Once you have formed rough dough, tip this out onto the work surface and very lightly work it into a ball of dough. Form the dough into a flat rectangle, wrap in clingfilm and put it in the refrigerator for 45 minutes. 3. Meanwhile, put the remaining butter in the freezer to chill it thoroughly (it needs to be hard). 4. Lightly flour a work surface and roll the dough out with the short edge facing you into a long rectangle three times as long as it is wide, about 15x45 cm. Brush off any excess flour. Take the butter out of the freezer and coarsely grate it over the bottom two-thirds of the dough. 5. Fold the top third of the dough over the middle third, and then fold the bottom third over the other two-thirds, as in folding a letter. This is known as the first turn. Wrap the dough in clingfilm and chill in the refrigerator for 20 minutes. 6. Remove the dough from the refrigerator and turn the dough 90 degrees so that the open ends are facing you. Repeat the rolling process and, before folding, sprinkle the dough with half the remaining sugar. Fold the dough into thirds as before and repeat this a second time. Wrap the finished dough in clingfilm and chill for 30 minutes before using. 7. Line two baking trays with baking parchment. Remove the dough from the refrigerator and cover the work surface with a small amount of caster sugar. Roll the dough into a 20x50 rectangle. Using a sharp knife, trim the edges of the dough and cut the pastry into two strips and divide each strip into five equal squares. 8. Fold the corners of each square into the center and press gently to secure in place. Put each pastry on the prepared baking trays, preferable inside 8 cm tart rings, or if you don’t have them use muffin pans. Leave the pastries to rest for 30 minutes. Preheat the oven to 190 ºC (170 ºC fan oven). Bake for 20-25 minutes until golden brown and caster sugar has caramelized. 9. Remove from the oven and remove tart rings, if using, then leave the pastries to cool on the tray. Serve them at room temperature, when the sugar on the outside has set, giving you a wonderful texture.
