Adapted from the Barefoot Contessa's Foolproof If you feel like getting ahead, you can marinate the chicken in the mustard and buttermilk overnight or for a few hours; if you don't have time, don't worry. I made this for my in-laws without marinating the chicken at all, and they raved. If you marinate the chicken, too, the buttermilk definitely acts as a tenderizer. You can use any combination of bone-in, skin-on thighs or drumsticks. I love using thighs with this recipe. A few changes from the original recipe: You can find the original recipe online in various places, but these are the basic changes I've made: fresh bread crumbs versus panko; 4 tablespoons olive oil versus 2 tablespoons olive oil + 2 tablespoons butter; buttermilk versus white wine (because the buttermilk is thicker than wine, I find the breadcrumbs stick to it better); 4 thighs and 4 drumsticks versus 1 chicken cut into 8 pieces; oven temp at 400ºF the entire time. If you are up for a little adventure... ... this is what I suggest: Buy two chickens. Cut them up (video guidance here). Use the 4 thighs and 4 drumsticks here. Remove the breasts from the bones and make these tarragon chicken breasts on a subsequent evening. With the wings, necks, backbones, and breast bones, make stock. After two hours of gentle simmering, pull the meat from the stock bones, and make a simple chicken salad: mayonnaise + relish + a squeeze of lemon. Return the bones to the pot and gently simmer for another hour.

This recipe is one of our favorites from Maangchi's Big Book of Korean Cooking, our December 2019 pick for BA’s Cookbook Club. We like to think of this sweet and salty dish as a sort of vegetarian bulgogi. Marinating and pan-frying eggplant keeps it firm, flavorful, and chewy—almost meaty. The marinade glazes it as it cooks, so it glistens. Prepared this way, the eggplant looks very special, even though the recipe is easy. It’s a versatile dish that makes a great side for rice and many other preparations. The eggplant tastes wonderful right off the stove, but it’s even better after a few hours, when all the flavors have had time to mingle and deepen. Seek out Korean eggplants, if possible, which are sold in Korean markets. They are thinner than ordinary eggplants and the skin is more tender. But regular eggplants work, too.

George and Kostas “Charlie” Tiglianidis are serious about their gyros. After the brothers closed their family deli, Orchard Cafe, in Norwood, after 15 years, they opened The Feisty Greek in the same strip mall last year. They also consulted with a visiting chef from Greece to fine-tune their gyro marinade. They did away with the carving knives you usually see on the large vertical spit of meat and opted instead for a rotating blade designed to shave pork shoulder into fine shreds. As George Tiglianidis explains, pork — not beef or lamb — is the traditional choice for the Greek version of this dish. French fries are also commonly tucked into this pita wrap, so they decided to do that. too.

The idea for this hearty beef stroganoff bake arose when the team and I challenged ourselves to come up with a budget-friendly version of the classic Russian dish as part of our Savvy Dinner Plan. I wanted it to be quick and easy enough to make for a hungry family mid week, and for it to be cheaper than the original recipe – without losing any of that delicious richness stroganoff is known for. The result is a saucy pasta bake that can be on the table in just 25 minutes! How to make my budget-friendly beef stroganoff: key ingredient swaps I used Coles Simply Pasta Spirals as a great-value option to make this dish stretch further, without compromising on flavour or texture. This savvy ingredient not only helps reduce the cost, but it really holds its shape well, making it ideal for a pasta bake. While steak is traditionally used in beef stroganoff, I used beef strips in this recipe because it not only cooks quickly but it works out cheaper, too. To keep costs down further, I swapped button mushrooms for cup mushrooms, swapped crème fraîche for sour cream, omitted the wine, and used a stock cube with water instead of liquid stock.
