There are some recipes that are worth the wait and Julia Child's Beef Bourguignon is one of them. You can’t and shouldn't rush savory, seared beef, and fork-tender vegetables, especially when they simmer a rich full-flavored sauce. When a recipe is this good, there's no need to rush, are we right? Don’t be surprised when this time-honored dish wows your whole crew. There's a reason this beef bourguignon is a culinary cult-classic, and they’ll see and taste why.
One–pan Lebanese Kafta - with ground beef, onions and potatoes in a rich tomato sauce. This traditional meal is delicious and very easy to make.
This recipe is one of our favorites from Maangchi's Big Book of Korean Cooking, our December 2019 pick for BA’s Cookbook Club. We like to think of this sweet and salty dish as a sort of vegetarian bulgogi. Marinating and pan-frying eggplant keeps it firm, flavorful, and chewy—almost meaty. The marinade glazes it as it cooks, so it glistens. Prepared this way, the eggplant looks very special, even though the recipe is easy. It’s a versatile dish that makes a great side for rice and many other preparations. The eggplant tastes wonderful right off the stove, but it’s even better after a few hours, when all the flavors have had time to mingle and deepen. Seek out Korean eggplants, if possible, which are sold in Korean markets. They are thinner than ordinary eggplants and the skin is more tender. But regular eggplants work, too.
This winter feast on lightly-spiced meatballs, topped with a swirl of houmous, pine nuts and refreshing mint.
Moroccan spice-flavoured meatballs in a thick tomato sauce served with herb cous cous.
If you like your potatoes sliced thin and baked until they're creamy and cheesy, you will love Hungarian style potatoes. I've based this recipe on the Hungarian version of scalloped potatoes, a casserole called rakott krumpli. It shouldn't be difficult to make potatoes, Hungarian or otherwise I really, really wanted to make this with kielbasa (I know it's not Hungarian), but was unable to find any with walking distance in Valladolid. I tried to substitute fresh chorizo even though the local stuff tends to turn into hard lumps if cooked too long. In addition, I cut the recipe in half
The obvious choice for lamb is to work it into a fragrant Indian curry.
Recipe video above. At “posher” establishments, Mongolian Lamb arrives at the table on a hot iron plate, sizzling and spitting for theatric effect. Sizzle aside, this homemade version is a near perfect replica. Even the velveted texture of the lamb! The sauce is sweet and savoury, with Chinese Five Spice and Hoisin the dominant flavours. It's completely addictive! Also excellent made with beef - see Note 1.

Notes: Fillo (or phyllo) comes in all shapes and sizes these days. The variety I can find, Athens brand, weighs 1 pound and contains two 8-oz bags of 20 sheets each measuring 9 x 14-inches. If your fillo comes in the larger sheets, cut it in half so that it’s roughly 9 x 14-inches. After you cut it, gently roll it up and place it in a ziploc bag.

These Chinese Chive Pies or Pockets 韭菜盒子 have a very crispy exterior but really chewy dough inside. It's filled with a mix of chives (of course), veggies, and vermicelli noodles! They're wrapped in homemade wrappers and I really think freshly made dough makes a BIG DIFFERENCE. Freshly made wrappers from homemade dough turn out so much chewier, they also don't easily break apart when you fill them with your choice of veggies and noodles.
This cake is not like any other. It has no flour and no oil or butter. Very light and fluffy. It is low in calories and high in protein. It tastes like a cheesecake.
Seriously good-tasting Pork Souvlaki (skewers). Wrapped inside pita flatbread along with thick and creamy Tzatziki tomatoes and onions.
This is a dish you could make vegetarian or omnivore but I chose to make a chicken version of this dish. It's a Palestinian dish called makloubeh (or maklouba, maklube or maqluba) with fragrantly spiced chicken, soft cauliflower, creamy eggplant and aromatic rice all stacked in layers. Cooked upside down so that the rice steams on top of the layers of chicken and vegetables, you simply flip it upside down when ready so that the chicken sits on top and it looks like a rice cake. It is surprisingly easy and designed to impress. Traditionally it is meant to be eaten with the hands with some flat bread. I first tried it in Oman as a prawn makloubeh and it was fantastic with some yogurt dip.
