台灣人總是崇尚日本的美食，尤其對於日本人煮的米飯更是讚不絕口。 「食貨誌」網站站長鄧士偉就對此分析台日兩邊的米飯差異，以及指出台灣人在洗米時會犯的錯誤，再來告訴大家如何在家也能煮出好吃彈牙的日式白米！ 鄧士偉表示日本的白米品質的確很好，但不代表我們台灣的米就是劣質。台灣、日本、韓國、中國東北的稻米主要是短米粒的粳稻。而中國、東南亞、印度等地則種植秈稻。秈米飯口感鬆軟，粳米飯香甜Q黏，各有各的長處。台灣米其實跟日本米口感相似，但為何大家會覺得日本米飯比較好吃呢？其實問題就出在煮飯的步驟與方式。 廣告1 鄧士偉在「台灣農糧署糧食產業組糧食經營科」網站上看到一份米飯煮法，網站寫到洗米只需兩、三次，不宜過多，以免養分流失，其實這是錯誤的觀念。白米的外層有較多的脂肪與蛋白質，這些脂肪與蛋白質已經因長期暴露在空氣中，變質酸化，所以應該要盡量把米洗乾淨。還有上面寫到煮飯時，米與水的比例為1:1.2，就是造成台灣飯較軟爛的原因，如果你仔細觀察過日系電子鍋的運作流程，在一般煮飯的行程的前三十分鐘根本其實只是浸泡。換句話說洗完米之後的浸泡是多餘的。 雖然說大家在煮飯時都是以電鍋為主，但電鍋真的是非常落伍的煮飯工具。日本很早就停止生產外鍋放水的電鍋，改用電子鍋煮飯。最後網站上寫到煮好後需燜一下，但如果米和水的比例不對，燜一下只會讓米粒吸收更多水份，變得更軟糊影響口感。 廣告2 最後鄧士偉也提供了自己煮出近乎日本飯的撇步。有興趣的朋友可以試試看喔！首先，米不要亂量，一杯米等於兩碗飯，要煮一杯米一定要先裝超過米杯的高度，再用筷子把多餘的米抹平，這才叫一杯米。第一道洗米最重要！水一下隨便攪兩下，就要立刻把水倒掉，以免米粒吸收外層變質的脂肪蛋白質的雜味！接著再繼續沖洗，水只要一變濁就要倒掉，直到能直接看到米力才算完成。 再來瀝乾蓋濕紙巾保濕靜置30分鐘，讓米吸收洗過後殘留在米粒表面的水份，但又不致於吸收太多水。加入一比一的水，水記得要準確測量！接著按「快速煮飯」，這點很重要！因為一般煮飯包含了浸泡時間，會使米飯過爛。煮好後翻鬆散水氣，再保溫燜十分鐘。你就可以有日本料理店水準的香甜Q彈白米飯囉！ 來源：Ettoday 果然煮米也是一個學問呢！快把這個煮出日式白飯的方式分享給你愛料理的朋友吧！
