Je reviens aujourd’hui vous proposer une recette de cake salé que j’avais réalisé au printemps, mais qui colle parfaitement à la saison automnale avec son bon goût de noisettes. Réalisé tel un carrot-cake, mais en version salé, ce cake devrait vous régaler! Sa belle couleur orangée ne vous met-elle pas déjà en appétit? Le cake est moelleux; les noisettes, ainsi que l’huile d’olive, lui apportent du caractère. Vous pouvez le déguster à l’apéritif, en pique-nique, en entrée ou pour un souper léger, accompagné d’une salade. Bref, vous auriez tort de vous en priver! Carrot cake feta-noisette à l’huile d’olive (Préparation 20 min/Cuisson 45 min) Ingrédients/ 1 cake (25 cm) 250 g de carottes 125 g de farine 100 g de poudre de noisettes 2 c à c de levure chimique 40 g de noisettes entières 100 g de feta 3 œufs 15 cl d’huile d’olive 1 grosse cuillère à soupe de coriandre fraîche ciselée 1 belle pincée de piment Sel, poivre Préchauffez votre four à 165°C, chaleur statique. Lavez, séchez, épluchez et râpez les carottes avec une grille fine. Dans un cul-de-poule, mélangez la farine, la levure, la poudre de noisettes, la coriandre ciselée et les carottes râpées. Ajoutez les noisettes grossièrement concassées. Dans un autre bol, battez ensemble les œufs; ajoutez l’huile petit à petit. Salez, poivrez légèrement, ajoutez le piment. Versez ce mélange sur la préparation précédente et mélangez jusqu’à obtenir un appareil homogène. Goûtez et rectifiez l’assaisonnement si nécessaire. Ajoutez la feta coupée en dés. Mélangez délicatement pour ne pas trop l’émietter. Versez la pâte dans un moule graissé et enfournez pour 45 min. Le temps de cuisson peut varier selon les fours. Le cake est cuit lorsqu’un pic enfoncé en son centre ressort sec. Attendez 15 min avant de démouler le cake.
