This week I’m showing you the big wedding reception I catered for friends earlier in the spring, and today I want to share the menu we finally landed on. The reception took place after dinnertime, and so the food was all small bites, with cake to follow. But I knew that a lot of people probably wouldn’t eat much dinner beforehand, so I leaned towards the heavy side of appetizers. Want to see what we served, and how we planned it out?

Le samedi je n'étais pas bien vaillant et comme ça avait été bien agréable de commencer la journée à l'aube vers 11h55 avec directement l'apéro après le p'tit déj' (comment on pourrait appeler ça d'ailleurs ? dej'pero ?… parce que brunch quand c'est café vin blanc… ) je me suis dit que recommencer la même chose le dimanche ça serait bien aussi ! Et voilà comment je me retrouve à me les rouler une fois de plus ! Roulés ricotta roquette chorizo et basilic !!! Ingrédients : 1 carré de pâte feuilletée – des tranches très fines de chorizo – de la ricotta – du fromage râpé (de préférence du fromage basque de brebis bien ferme) – des pousses de roquette – des petites feuilles de basilic - 1 jaune d'œuf – poivre Etalez la pâte finement, il faut que ça soit fin fin. Etalez dessus de la ricotta, généreux. Après les tranches de chorizo, les feuilles de roquette et de basilic et on finit par un peu de fromage râpé, au goût, là par contre pas trop, c'est ce qui va tenir les roulés. Après il faut rouler en serrant bien, sinon les roulés vont se défaire, attention avec le chorizo ce n'est pas évident et donc si vous attrapez deux mains de plus pour vous aider c'est bien bien ! Coupez en tranches d'environ 1cm puis écrasez-les légèrement avec la paume de la main. Posez-les sur une plaque couverte de papier sulfurisé. Badigeonnez de jaune d'œuf. Enfournez la plaque dans un four préchauffé à 180°, laissez au four pendant quinze à vingt minutes. Après il n'y a plus qu'à faire couler un joli vin blanc dans les verres et… And this is how I find myself rolling them again! Rolled ricotta chorizo argula and basil!
