I have resorted to finding alternatives to my favorites side dishes so I don’t feel like I am cheating myself out of all the goodness. I was on Facebook the other day when a friend shared a yummy recipe of Loaded Cauliflower and I must admit I may have drooled a bit! So without further adieu I am sharing with you the Yummiest Loaded Cauliflower Recipe Ever! Good-bye carbs hello Flavor! Ingredients: 1 large head of Cauliflower cut into bite size pieces (approx 6 cups) 6-8 strips of bacon cooked and crumbled 6 tbsp. chopped Chives 1/2 cup Mayonnaise 1/2 cup Sour Cream 2 cups cheddar Cheese (I prefer a strong cheese so I use Old cheddar)Directions: Turn oven on to 425° In a large pot bring cauliflower to a boil. Cook for 8-10 minutes. Drain cauliflower and set aside to cool Combine 1 cup of cheddar cheese, 1/2 of the crumbled bacon, 1/2 of the chives, sour cream, Mayonnaise, and cauliflower and mix well. Place the mixture into a baking dish and sprinkle the rest cheese and bacon on top. Bake for 15-20 minutes so the cheese will melted, Sprinkle the reminder of the chives on top and serve. This holiday season when someone asks you to bring a dish tell them no problem and bring this yummy dish.
