Notes: You need an active sourdough starter. You can build a starter from scratch in just about 1 week. But I am a huge proponent of buying a starter. Here are two sources: King Arthur Flour Breadtopia As always, I highly recommend investing in a digital scale before beginning any bread baking adventure. Flour: I have had success using all-purpose flour, but if you can get your hands on bread flour, that is ideal, especially if you live in Canada or abroad. Moreover, if you live in Canada or abroad, you may need to reduce the water amount. Consider holding back some of the water during the mixing process to ensure you don't end up with a soupy mess. Straight-Sided Vessel: The vessel I use in this recipe, similar to this one, is 8 cups. Most grocery stores carry storage vessels similarly sized. Using a straight-sided vessel for the bulk fermentation will help prevent over-fermentation because it allows you to see when the dough has truly increased by 75% (or slightly more or less) in volume.

Hefeteige, die über Nacht im Kühlschrank gehen, finde ich klasse. Besonders, wenn man am kommenden Tag noch genug andere Dinge vorzubereiten hat, sind sie problemlos und müssen nur noch abgebacken werden. Dieses Rezept schmeckt durch die Tomaten schön fruchtig und das Brot läßt sich auch nochmal prima aufbacken - wenn denn überhaupt etwas übrig bleibt. Zutaten 600 + 100 g Weizenmehl, Type 550 500 ml Wasser 1/2 Würfel = 20 g Frischhefe 1 EL Salz 1 EL getrocknetes Basilikum 1 EL getrockneter Oregano 150 g getrocknete Tomaten in Öl, abgetropft gewogen Hefe in Wasser auflösen. 600 g Mehl mit Salz, Oregano und Basilikum mischen und dann mit dem Wasser-Hefe-Gemisch schnell zu einem Teig verkneten. Ich habe dazu meine Kitchen Aid benutzt. Wer eine solche Küchenmaschine nicht hat, nimmt einen Mixer mit Knethaken. Die Tomaten kleinschneiden, dann mit den 100 g Mehl mischen, bis sie gut ummantelt sind. Zum restlichen Teig geben und kurz untermischen, der Teig ist sehr feucht und weich. In eine mindestens doppelt so große Schüssel mit Deckel, die mit einem Eßlöffel Mehl ausgestäubt ist, geben. Zudeckeln und mindestens 12 Stunden im Kühlschrank parken. Am nächsten Tag den Teig eine Stunde Zimmertemperatur annehmen lassen. Dann die Hälfte auf eine gut bemehlte Arbeitsfläche geben, nicht mehr kneten. Auch von oben mit reichlich Mehl bestäuben und dann zu einer ca. 30 cm langen Stange drehen. Diese auf ein mit Backpapier ausgelegtes Backblech setzen und aus dem restlichen Teig eine zweite Stange formen. Backofen auf 200°C U/O vorheizen und das Backblech auf mittlerer Schiene 40 Minuten backen. Brote auf einem Gitterrost auskühlen lassen. Und so sieht es aufgeschnitten aus:
