American herbalist Rosemary Gladstar wrote this recipe down and named it Fire Cider in the 1970s. Ohioan Dawn Combs, author of Sweet Remedies: Healing Herbal Honeys writes that “this important medicine should be made, shared and taught as often as possible.” that this oxymel features the best herbs for supporting the immune system. INGREDIENTS 1/2 cup freshly grated organic ginger root 1/2 cup freshly grated organic horseradish root 1 medium organic onion,chopped 10 cloves organic garlic,crushed orchopped 2 organic cayenne peppers,chopped Zest from 1 organic lemon Juice from 1 organic lemon 1 quart organic apple cider vinegar 1/4 to 1 cup raw local honey, more if needed DIRECTIONS Add the prepared roots, onion, garlic, peppers, lemon zest and juice, and enough apple cider vinegar to cover all in a quart jar. Lay a piece of natural parchment paper over the opening of the jar to keep the vinegar from touching the metal lid (or use a plastic lid). Shake well. Store in a dark, cool place for 1 month and remember to shake often. After 1 month, strain the concoction through a kitchen strainer, pouring the vinegar into a clean jar. Be sure to squeeze as much of the liquid goodness as you can from the pulp while straining. Add 1/4 cup honey and stir. Taste your cider and continue to add honey in 1/4-cup increments until you reach the desired sweetness. To Use: Just a tablespoon will support your immune system when everyone else is getting the cold or flu, but you should feel free to use this oxymel as often and as much as you like.

A classic but often overlooked herbal preparation, oxymels have been used for ages for a variety of respiratory and immune system issues including coughs, mucus, and difficulty breathing. Made from vinegar and honey, oxymels are a tasty and simple herbal preparation to make.

Vinegar is great at extracting the minerals from plants, making it great for nutrative herbs, but it can also be used for oxymels. Oxymels are a herbal decoction often used to help with colds and flu. A basic oxymel has vinegar, honey, and garlic. Each of these ingredients can help with colds. Apple cider vinegar helps by actually increasing secretions in the throat, which is a good thing for colds and flu. It is also packed full of potassium a necessary mineral that will help with water balance in the body. Honey is antimicrobial. It works well because it is hydrophilic, meaning it takes out all the water from microorganisims. Honey also helps make coughs more productive when you just can't seem to get the crap out of your lungs. And of course it taste good! Garlic is antimicrobial as well and helps increase the immune systems response to viruses and bacteria. Other functions of garlic are that in lowers cholesterol and blood pressure and even has anti-cancer properties. For garlic oxymel you cut up the garlic and add it to hot water for about 30 minutes. Then you add a cup of apple cider vinegar, and about 1/2 cup of honey. Fire cider is another form of an oxymel. Fire cider is a little more potent and takes longer to make. For this you take onion, garlic and a mixture of other herbs and soak them in vinegar for a few weeks before straining and adding honey. Here is how I made mine: 2 heads of garlic- make sure you crush them ahead of time and let them sit a while. This helps with conversion to the active ingredient allicin, a sulfur compound. 2 medium onions Fresh ginger root Turmeric- Fresh root is great, I only had dried spice ~ 2 tablespoons Dried powdered cayenne pepper ~ 2 tablespoons Other dried or fresh herbs you would like- I used sage and parsley, thyme or rosemary would also be great options. You can also add fresh shallots. Add all ingredients to a jar. Cover all ingredients with Apple cider vinegar. Store for 2 weeks minimum, shake daily. Strain, save the liquid. Add honey to taste. You can use this for prevention of colds and flu or during a cold to help decrease symptoms severity and length. Take a few tablespoons 2-3 times a day. the more the better when you are fighting off a bug. As a side note it only takes about 1 clove of garlic a day for its preventative effects including it's effects on blood pressure and its anti-cancer properties.
