De rozenharissa die Ottolenghi vaak in zijn recepten gebruikt, maakt me nieuwsgierig. Ik weet wel dat de ene harissa de andere niet is. Harissa is een gekruide Noord-Afrikaanse chilipasta en kan heel pittig, zelfs scherp smaken. Je moet steeds werken met kleine hoeveelheden en vaak proeven om de juiste balans te verkrijgen. Als je bij de harissa rozenblaadjes toevoegt, bekom je rozenharissa. Maar ook hier zijn er veel verschillende merken. Dus toen we twee weken geleden in Londen bij Ottolenghi gingen dineren (wat we wel vaker doen), heb ik van de gelegenheid gebruik gemaakt om 2 potjes rozenharissa daar ter plaatse te kopen. Uit zijn boek ’Simpel’ maken we vaak de geroosterde wortelen met harissa en granaatappelpitten. Benieuwd hoe de rozenharissa zal smaken. Het was een succes en we hadden al meteen spijt dat we niet meer bokaaltjes hadden meegebracht. Veel zoeter en subtieler van smaak. Maar met de juiste dosering kom je met een gewone harissa ook al heel dicht in de buurt. Hij serveert ze met kip, lamsvlees of in combinatie met een aantal verschillende groenten en peulvruchten naar keuze. Wij eten ze meestal als een origineel en tevens gezonder aperitiefhapje. Hierbij kan je een dip van magere platte kaas op smaak gebracht met peper en ras el hanout serveren.
Paneer (of panir) is een kaas afkomstig uit India. Gemaakt van volle melk, die door toevoeging van een zuur, zoals citroensap of yoghurt, gaat stremmen. Je kan dit thuis zelf maken, maar in de Aziatische winkels en in sommige natuurwinkels zijn ze verkrijgbaar. De inspiratie van dit recept heb ik uit het kookboek ‘Puur India’ van Meera Sodha gehaald. Zij heeft de matar paneer (curry van doperwten en paneer) in een jeugdiger jasje gestopt. En ik heb er de Fabilicious versie van gemaakt. De paneer kan je ook perfect vervangen door tofu.

Foto : Anneke Ruijsbroek Het lijkt vandaag of de herfst zijn intrede heeft gedaan. Daarom deze passende bramen-appeltaart met yoghurt. Een combo van de eerste oogst appelen en walnoten met de laatste pluk van bramen uit de tuin.
Met pompoenen kan je voortreffelijke chutney’s maken. Als aanvulling bij een indische curry, maar ook bijzonder geschikt als garnituur bij paté’s en charcuterie. Met zijn dieporanje kleur en rijk van smaak, is dit een aanwinst voor de provisiekast.
‘Hoe bak ik zuurdesembrood’ van Emmanuel Hadjiandreou is een mooie aanwinst. Hij laat je kennismaken met zuurdesem en het proces van langdurige gisting. Het is vooral de gevarieerde samenstelling van recepten die me zo aansprak. Volkoren, bakken met oude graansoorten, zuurdesembrood op basis van andere gistculturen, glutenvrij en zuurdesemlekkernijen komen hier aanbod. Het kneden gebeurt niet met de keukenrobot maar met de handen. Hij gebruikt hier een eenvoudige vouwtechniek die beschreven staat in de werkwijze. Vandaag heb ik gekozen voor de zuurdesembrioche.
Een fris, luchtig taartje: combo van amandel, limoen en frambozen.
Een eenvoudig en gemakkelijk te maken zomers dessert. Heb je geen ijsturbine, koop dan een goede kwaliteitsvolle citroensorbet. Sorbet, maar ook ijs, is het lekkerst vers uit de ijsturbine. Daarom bewaar ik deze niet veel langer dan een week en dan kan je gerust het bindmiddel weglaten. Serveer sorbet of ijs niet te koud, de smaken komen beter tot hun recht. Haal ijs of sorbet zeker 15 minuten of wat langer uit de vriezer alvorens op te dienen.
Deze dumpings met gerookte tofu heb ik voor de eerste maal geproefd bij zoonlief. We konden er niet genoeg van krijgen. Overheerlijk! Ideaal om thuis te proberen en het recept op de blog te plaatsen. Bram had de tofu zelf gerookt, maar ik vond dit wel een brug te ver. Ik kocht dus voor de allereerste keer gerookte tofu. Persoonlijk vonden de meeste onder ons de gerookte smaak overheersend. Is dit afhankelijk van merk tot merk? Ik heb er geen ervaring mee. Je kan de helft gerookte tofu mengen met gewone tofu. Bram’s recept voor gerookte tofu geef ik jullie ook mee.
