Plum Cake with Buttery Crumbs Another delicious recipe I tried from this wonderful blog, "Moje Wypieki". I loved this recipe so much! (Adapted the recipe to my way of preparation ) INGREDIENTS The leaven yeast : 4 teaspoons dry yeast or 1 oz of fresh yeast 1/2 cup cool milk 1/2 cup flour 1/4 teaspoon sugar Start the yeast leavening by pouring milk into a large bowl and mixing with the yeast. Then add the flour and sugar, stir well. Cover with a clean kitchen cloth or towel and let stand in a warm place to rise and double in volume. Yeast dough : 1/2 cup warm milk 1/2 cup sugar 1 teaspoon vanilla extract Grated peel of 1/2 lemon 2 oz of melted sweet cream butter 1 whole egg 1 egg yolk 2 + 3/4 cup flour 2 lbs plums (suitable for baking) Crumble: 6 oz flour 3.5 oz sugar 0.5 oz vanilla sugar (1 small package) 4.5 oz melted sweet cream butter 1/4 teaspoon cinnamon PREPARATION When the yeast leaven doubled its volume and it rested for about half an hour, Add all the ingredients for the yeast dough and mix well, Best if using your hands. Knead the dough. Best when done in a large bowl, through pulling the dough with one hand, at the same time getting as much air as possible into the dough. As soon as the dough does not stick to your hands, it is properly kneaded. This takes time, strength and patience. Well- kneaded sweet yeast dough should be soft and flexible. Cover and leave to rise again for about an hour. In the meantime, prepare the crumbs. Melt the butter, Mix the flour with vanilla sugar and cinnamon, pour a warm melted butter over it. Mix all the ingredients by rubbing the mixture in your fingers. Line a baking pan (approximately 15x10in) with parchment paper. Transfer the risen dough into the pan. If the dough does not come out so easily, you can use a little bit of oil to spread between your palms – this will help with transferring the dough into the pan. Washed, halved and pitted plums should be evenly distributed on the dough (pit side up). Sprinkle crumble on the plums and set aside to rise for another 30 minutes. Bake at 350F for about 45 minutes, until the crumble is lightly browned or test stick comes out clean. Leavened dough tastes best when fresh and still warm, preferably with a glass of cold milk . (Dostosowałam przepis do mojego sposobu przygotowania). SKLADNIKI: Zaczyn Drozdzowy: 4 lyzeczki suchych drozdzy (ok. 16g) lub 32 g swiezych drozdzy 1/2 szklanki letniego mleka 1/2 szklanki maki 1/4 lyzeczki cukru Przygotowac zaczyn poprzez wlanie mleka do duzej miski i wymieszanie z drozdzami. Nastepnie dodac make i cukier, wymieszac. Przykryc czysta sciereczka i odstawic w cieple miejsce do wyrosniecia i podwojenia objetosci. Ciasto Drozdzowe: 1/2 szklanki letniego mleka 1/2 szklanki cukru 1 lyzeczka ekstraktu waniliowego skorka otarta z 1/2 cytryny 1/4 kostki roztopionego masla 1 cale jajko 1 zoltko 2 + 3/4 szklanki maki 1 kg sliwek (wegierek badz innych, ktore nadaja sie do pieczenia) Kruszonka: 180g maki 100 g cukru 16g cukru waniliowego (1 male opakowanie) 1/2 kostki roztopionego masla (125g) 1/4 lyzeczki cynamonu PRZYGOTOWANIE: Do wyrosnietego zaczyny dodac pozostale skladniki na ciasto drozdzowe. Wyrobic ciasto. Najlepiej w duze misce, poprzez tzw. "szarpanie" ciasta jedna reka, wtlaczajac przy tym jak najwiecej powietrza. W momencie gdy ciasto sie nie klei do rak, jest ono prawidlowo wyrobione. Wymaga to czasu, sily i cierpliwosci. Dobrze wyrobione ciasto drozdzowe powinno byc miekkie i elastyczne. Przykryc i ponownie odstawic do wyrosniecia na okolo godzine. W miedzyczasie przygotowac kruszonke. Make wymieszac z cukrem waniliowym i cynamonem, zalac goracym i roztopionym maslem. Dobrze polaczyc i zrobic kruszonke, rozcierajac mieszanine w palcach. Duza blache o wymiarach ok. 40x30 cm wylozyc papierem do pieczenia. Wylozyc na nia wyrosniete ciasto. Gdy ciasto nie chce sie dobrze wylozyc na blache, mozna uzyc odrobine oleju do natarcia dloni przed wylozeniem ciasta. Ulozyc obok siebie polowki sliwek (strona od pestki do gory), posypac kruszonka i odstawic jeszcze do wyrosniecia na kolejen 30 minut. Piec w temperaturze 180C przez okolo 45 minut, do momentu gdy kruszonka sie lekko zrumieni lub wsadzony patyczek drewniany jest suchy po wyjeciu z ciasta. Ciasto drozdzowe smakuje najlepiej swieze, jeszcze cieple, najlepiej ze szklanka zimnego mleka. Smacznego! ~e.
