Today I made a layered Earth cake in celebration of Earth Day! Yield: makes 1 earth cake Things you'll need Ingredients 4 eggs 1 1/3 cup butter 1 1/3 cup sugar 1 cup all purpose flour 2/3 cup self raising flour 1 cup almond meal 1 tsp almond extract 1 white cake mix Food coloring: red, yellow, green and blue Equipment Inner Core - Cake Pop Maker Outer Core - Silicone Sphere Mold Mantle - Ball Pan Set Decorating Bags #1 piping tip Baking Sheet Let's get started! Prepare the white cake mix according to the box instructions and make cake balls using the cake pop maker. Set it aside. Preheat your oven to 350F. In a medium bowl, whisk together the all purpose flour, self raising flour and almond meal. In a stand mixer, cream together the butter and sugar until light and fluffy. Add the eggs to the butter mixture until it's well combined. Add the almond extract. Slowly add the flour mixture to the wet ingredients until no streaks remain. Tint this batch yellow. Repeat steps 2-5 then tint that batch red. Place the silicone sphere mold on a baking sheet and spoon the yellow batter almost to the top. Place a cake ball in the center of the yellow batter then bake for about 30 minutes or until a skewer inserted comes out dry. Let it cool completely Place the cakes flat side down and remove the excess edges using a knife. Grease the sphere cake pans with shortening and fill it with the red cake batter about 3/4 full. Using a spoon, make a well in the center and place the yellow half sphere cakes in the middle. Bake in the oven for 45 minutes to an hour then let it cool completely. Level off the cakes using a knife. Pipe a thin layer of frosting to one cake and spread evenly. Place the other sphere on top of the cake. Time to decorate! Tint your frosting blue. Cover the sphere completely and use an offset spatula to smooth it out. Add some texture by lightly dabbing the tip of the spatula to the frosting. Tint your frosting green and place it in a piping bag fitted with a #1 piping tip. Outline the details all over the earth cake and fill it in. Add light swirls of white frosting to the blue frosting.
