Over the past few years, I've collected copycat recipes for some of my favorite restaurant foods...O'Carr's chicken salad, Chick-fil-a chick...
Chances are you don't eat enough bison. This may conjure up images of Native Americans hunting on the plains of pre-colonial America. But they knew something that we seem to have forgotten—bison is a fabulous food source. It's a favorite in my household. Bison is lean and exceptionally meaty. It's almost always grass-fed and raised on smaller farms. And most importantly, it tastes great. I have two sources for bison—Lindner Bison at my farmers market and my local Whole Foods, which has been carrying beautiful rib eye and NY strip steaks. While it used to be tough to find, bison is becoming more common. Bison does taste great when cooked traditionally, but it's a prime candidate (pun intended) for sous vide cooking. This is due to its lean nature. Not only does it come out of the water bath at a perfect medium rare (my preference), but it also becomes phenomenally tender and juicy. I've been cooking up NY strip bison steaks in my Sous Vide Supreme and then serving them over a bed of wild arugula that's been tossed with lemon juice and olive oil. The finishing touch? A light shaving of parmigiano reggiano, which gives the dish a nice nuttiness. This is simple, healthy eating at its best. Notes on this Recipe: If you can't find bison, then regular beef steaks will work great. Also, if you don't own a Sous Vide Supreme (yet), then the bison steaks may be grilled or cooked traditionally, too. Sous Vide Bison with Arugula and Parmesan Serves 4 people Sous Vide Cooking Time: about 2 hours Gluten-free Print Recipe Ingredients 4 bison steaks, fat trimmed (I like New York strips) 4 cups wild arugula juice of 1 lemon 2 tablespoons extra virgin olive oil 2 tablespoons grapeseed oil 1 teaspoon dried garlic powder salt and freshly ground pepper parmigiano reggiano for shaving Directions Heat the Sous Vide Supreme to 130 degrees (F). Meanwhile, rinse the steaks and pat them dry. Sprinkle with salt (generously), freshly ground pepper, and a little garlic powder. Vacuum seal the steaks into pouches. Place in the Sous Vide Supreme and cook for about 2 to 2 1/2 hours (see instructions). Once they've finished cooking, remove from the pouches. Whisk together the lemon juice and olive oil. Season to taste with salt and pepper. Toss with the arugula and plate either on one big platter or four individual plates (the dish may be served family style or plated individually). Quickly sear each steak in the grapeseed oil and then remove it to a plate or cutting board. Slice the steaks horizontally (as pictured) and layer over the top of the arugula mixture. Shave the parmigiano over the top and finish with a little freshly ground pepper. Enjoy!

I plan on trying these out and sharing the successes/failures on our blog. First on the list?? O'Carr's chicken salad. I met my mom and aunt there for lunch last week. It reminded me about the copycat recipe that I pinned forever ago. I finally got around to testing it out last weekend and the end result tasted pretty darn close to the real thing! I found the copycat recipe here. I followed it for the most part. I left out the paprika (because I didn't have any) and added extra grapes. 2 cups boiled chicken, chopped in the food processor 1 tsp fresh dill 1/4 cup of grapes 1/8 cup of chopped pecans 4 pinches of paprika 2 oz cream cheese 3 T mayonnaise 1 tsp honey 2 pinches salt (Makes 3-4 servings) We got a food processor for our wedding so thanks to this recipe I was finally able to use it. After I boiled the chicken, I ran it through the food processor to get the chicken similar to how it is in the O'Carr's recipe. Then I added the rest of the ingredients. I've never tried to chop up dill before. Let's just say I need a little more practice ha! Mix it all together and here is the end result... Overall, this recipe turned out great. It was easy and pretty close to the real thing. I think the honey and cream cheese are what really makes it stand out from other chicken salads. In order to compare it to the actual O'Carr's version, I used regular cream cheese and mayonnaise. Next time I'll try it with reduced fat/fat free versions of everything. Try this out for yourself and leave a comment letting us know how it turns out!

I've always wanted to make homemade veggie burgers. This is for many reasons. I love them, for starters. But the ones at the store have always seemed too processed, and processed never taste quite as good as homemade. And of course, they can make for a very healthy, complete vegetarian meal. They're great on a whole wheat bun, or simply eaten straight as photographed with a little organic ketchup (one of the best condiments in the world, don't you think?). These burgers are made with lots of healthful things. The base is quinoa (I love a tri-color blend that I buy at Trader Joe's) and chickpeas, both protein powerhouses. I also use a little yam and egg white as a binder, but if you want to go vegan on these, just eliminate the egg white and turn them a little more carefully. I also throw in sunflower seeds and pumpkin seeds (healthy fats and protein). For the veggie part of the burger, I used a mix of sautéed carrot, shallots, and bell pepper and raw spinach, which I chopped in a food processor. Finally, I love adding sesame tahini, lemon juice, and cumin, and hot sauce. This recipe is fungible. You're welcome to play around with different combinations of beans, whole grains, and vegetables. I know I do. For inspiration, here's a great veggie burger recipe round-up. Chickpea Quinoa Veggie Burgers Makes about 6-8 patties Cooking time: about 30 minutes Vegetarian (with easy vegan conversion); dairy-free Ingredients 1 cup cooked quinoa, prepared per package instructions 1 14 ounce can of chickpeas, drained and rinsed 1 yam, cooked and skin removed (this can be done quickly in the microwave) 1 red bell pepper, seeded and chopped 2 carrots, peeled and chopped 2 shallots or 1 small onion, peeled and chopped 1 cup fresh spinach, tightly packed 2 tablespoons sunflower seeds 1 tablespoons pumpkin seeds juice of 1 lemon 1 tablespoon ground cumin 2 tablespoons sesame tahini 1 egg white (optional) 1 tablespoon hot sauce (optional) salt and freshly ground pepper flour for dusting 2 tablespoons grapeseed oil Directions Preheat the oven to 375 degrees. In a saute pan, heat one tablespoon of the grapeseed oil over medium heat. Add the shallot or onion and cook for a few minutes, until beginning to soften. Add the carrot and bell pepper and cook for a few minutes under just becoming tender. Remove from heat. In a food processor, chop the veggie mixture. Add the raw spinach. Process a little more until combined. Place the veggie mixture in a mixing bowl. Next, add the chickpeas and tahini to the processor and pulse until broken down. Place the chickpeas, veggie mixture, quinoa, sunflower and pumpkin seeds, and yam in a large mixing bowl. Add the lemon juice, cumin, egg white (optional), and hot sauce (optional). Stir with a spoon until well mixed. Season to taste with salt and freshly ground pepper. Using your hands, shape the mixture into individual patties. Dust each one with flour. In a heavy-bottomed saute pan or cast iron skillet that can transfer to the oven, heat the remaining one tablespoon of grapeseed oil over medium high heat. Place the burgers in the pan and cook until nicely browned (about two minutes). Carefully flip the patties. Transfer the pan to the oven and cook for another ten to twelve minutes, until the patties are nicely browned on the bottom and cooked through. Remove from the oven and serve with or without buns and ketchup. Enjoy! Advance Preparation: The patties can be shaped up to 3 days ahead of time and kept tightly wrapped in the refrigerator until you're ready to brown them. They can also be made in advance and then reheated in a low oven or on the stovetop.

Happy Monday! I had a fun and delicious weekend that included dinner at Pace Restaurant (yum) and a trip to the Studio City Farmers Market yesterday. I snapped up a lot of great items, from local fresh fish and shrimp, to sugar snap peas and spiky artichokes, to gluten-free buckwheat bread. But onto this week's recipe... My new favorite ingredient is... kefir! It's fermented milk made with a yeast and bacteria starter, kind of like yogurt. It contains healthy probiotics, yeasts, enzymes... all that good stuff. Sometimes I make smoothies or drink it with a little raw honey. It's also a great substitute for buttermilk in any recipe and has a nice tangy flavor. I've been baking it into cornbread, and just this weekend I made Raspberry Walnut muffins with it. Boy, were they tasty! Moist and tangy and delicious! The flour mix for my gluten free muffins is the same as my gluten free cornbread (1 cup cornmeal and 1 cup gluten free all purpose flour). I made these muffins with raspberries and walnuts, but you can let your imagination run wild and create all kinds of flavor combinations of fruit and nuts (or even dark chocolate chips if you're feeling feisty). Raspberry Walnut Kefir Muffins (Gluten Free) Makes about 7 muffins Baking time 20-25 minutes Vegetarian; gluten free Ingredients 1 cup gluten free cornmeal 1 cup gluten free all purpose flour 1/2 teaspoon salt 1/2 teaspoon cinnamon 4 teaspoons baking powder 1/4 cup maple syrup 1 egg 1 cup unsweetened kefir 1/2 cup unsweetened almond milk or regular milk 1/4 cup olive oil or coconut oil (melted) 1 cup fresh or frozen raspberries 1/2 cup walnuts, chopped Directions 1. Preheat the oven to 425 degrees. 2. Mix the dry ingredients together in a bowl (cornmeal, flour, salt, cinnamon, baking powder). In a separate bowl, beat the egg. Then mix in the maple syrup, kefir, milk, and oil with the egg. Pour the wet ingredients into the dry ingredients. Stir until combined, but be careful not to over beat the mix. Fold in the raspberries and walnuts. 3. Grease a muffin tin. Pour the mix into the muffin slots and bake for 20-25 minutes, until golden brown. Serve with butter. Enjoy!

Happy Monday! It's a cloudy, rainy one here in to Los Angeles, but a change of pace is nice sometimes. What news do I have? Firstly, Meatless Monday is featuring my soup recipe from last week (which they are calling Orzo Spinach Soup), and my photograph is on their homepage. Love those guys. And I'm halfway through my new book (quite an accomplishment I think). Anyway, I've been cooking up a storm and have lots of great recipes waiting in the wings. But today, I'm writing up this one for Apricot Cilantro Quinoa Pilaf. You see tons of rice pilaf recipes, but I love using quinoa instead. It's super high in protein and has a great nutty flavor. I used an organic tri-color quinoa blend from Trader Joe's that I just love! But any sort will work. For this recipe, I combine apricots, cilantro, and toasted pumpkin seeds, giving it a little bit of a Middle Eastern flair. This dish is great on its own (lots of protein), as a side dish, or served with eggs for breakfast. Apricot Cilantro Quinoa Pilaf Serves 4 people Cooking time: about 20 minutes Vegan; gluten-free Ingredients 1 cup quinoa 2 cups low sodium vegetable stock or water 1/4 cup dried apricots, chopped 1 shallot, peeled and chopped 1 tablespoon extra virgin olive oil 1/4 cup toasted pumpkin seeds 2 tablespoons fresh cilantro, chopped salt and freshly ground pepper lemon juice (optional) Directions Heat the olive oil over medium heat. Add the shallot and saute for a few minutes, until softened. Meanwhile, rinse the quinoa for 2 minutes under cold water. Add the stock, quinoa, and apricots. Bring to a boil, then reduce to a simmer and cover. Cook for about 10 to 15 minutes (per quinoa package instructions). Once the quinoa has finished cooking, remove from heat and fold in the pumpkin seeds and cilantro. Season to taste with salt and freshly ground pepper. If desired, finish with a little fresh squeezed lemon juice and garnish with chopped cilantro. Enjoy!

While you're dreaming about your next fix, try this copy cat recipe for the cheese biscuits! If you've never experienced the goodness, Jim N Nicks Cheese Biscuits are like little piles of heaven. Ok - maybe a tiny exaggeration - but just barely! They are deliciously sweet, but cheesy. Not dessert like, but perfect pre dinner snack/side. I had this recipe pinned for awhile, but finally got around to making it for a football watch party this weekend! This particular recipe came from High Heels & Grills, who took it from Plain Chicken. If you haven't visited either, head over for some yummy recipes! Forgive me in advance for the lack of photos. I was also fixing some crock pot mac and cheese and flourless chocolate cookies (I'll save that story for another day!), so the kitchen was a liiiiiiiittle bit busy. Whatcha Need 1-1/2 cups Bisquick 3/4 cup buttermilk 3 Tbsp. sugar 1/4 tsp. vanilla extract 1 cup shredded cheddar cheese Heres what ya do: Preheat over to 425 and grease your muffin pan. Mix all your ingredients in one bowl. Fill muffin cups about 2/3 full. Bake for 12 - 15 minutes. EASY PEASY! This recipe makes 8-10 biscuits. I doubled the recipe. Lets face it, my family and friends love to eat! So you don't get to see the makings, but who cares?? Here is the glorious final product: I posted that on Facebook, and my comments blew up! Panko-Crusted Red Snapper with Avocado Cream Sauce Can you believe that it's already Thursday? This week is flying by. Lots of social engagements, and the winding down of my awesomest birthday week ever. I've been working, working, working on the revisions (minor) to my novel, and they're going great (yay!!). Listening to a lot of bluegrass (I'm obsessed with the new Alison Krauss and Union Station album that my parents gifted me for my birthday). I need to get my tuckus to the gym today! The Adorable Monster is continuing his life of leisure in our household. Yesterday, a great mobile groomer called Puppy Love came to the house. He got bathed, cut, and fluffed to within an inch of his life and looks soooo ridiculous. On our way back from the pet store, people keep looking at him in my car and just laughing. At least, he brings people joy! He's currently in his favorite spot on our porch, chillaxing to the max, like he does every morning. I'll join him soon for my daily morning yoga routine, which wakes up my body and gets my mind ready to write and write and write... But before I make myself breakfast and begin my morning contortions, I'll leave you with a lovely late summer recipe for Panko-Crusted Red Snapper with Avocado Cream. Now, there's no actual cream in the sauce--rather, avocados contain so much glorious, healthy fat that they become like a cream when transformed into a sauce, with lemon and cilantro. Red Snapper, one of my favorite fish, is crusted with Japanese breadcrumbs called panko (though normal breadcrumbs would work, too). This gives the fish great texture. I served the whole dish over a bit of my homemade gazpacho (it's a nifty trick that it works great as a sauce with fish), but this step is optional. This is a lovely, delicious late summer dish that you'll want to make again and again. The flavors are reminiscent of south of the border. Enjoy! Panko-Crusted Red Snapper with Avocado Cream Serves 2 people Cooking time: about 30 minutes Dairy-free Print Recipe Ingredients 2 fillets of Red Snapper (about 4-6 oz. each) 1 cup all purpose flour 2 eggs, beaten 2 cups panko breadcrumbs salt and freshly ground pepper 2 tablespoons grapeseed oil 1 avocado, seeded and peeled 1/2 teaspoon ground cumin juice of 1 lemon 1/4 cup fresh cilantro, packed 1/2 cup homemade gazpacho (optional) Directions Heat the grapeseed oil in a saute or frying pan over medium-high heat. Rinse the snapper fillets and pat dry. Season them with salt and freshly ground pepper. Working with one fillet at a time, coat the tenders with flour, shaking off any excess. Then, dip it in the egg mixture, also shaking off the excess. Finally, coat the fillet with the panko breadcrumbs. Repeat with the other fillet. Place the snapper in the pan, cooking for a few minutes on each side, until golden brown and cooked through. Meanwhile, to make the avocado cream, place the avocado, cumin, lemon juice, cilantro, a pinch of salt, and about 2 tablespoons of water in a food processor or blender. Puree the ingredients together, adding more water as needed for desired consistency. To serve, ladle a little gazpacho onto the bottom of a bowl (this step is optional). Top with a fillet and spoon some of the avocado cream on top. Finish with a little chopped cilantro and freshly ground pepper if desired. Enjoy! Hey everyone! We're linking up again this week for Saw It. Pinned It. Did It. with Katie and Stephanie. As you know, I'm always on the lookout for an easy and delicious recipe. I saw this pin on Pinterest a few months ago, which led me to this amazing recipe. If you haven't visited Plain Chicken then you need to stop what you're doing right now and go!! This recipe is for No Boil Baked Penne. Yes, that's right, you don't even have to boil the noodles! Could it get any easier? I make it even easier by using pre-cooked turkey sausage. So here's what you need: 1 jar pasta sauce (26 oz) 1.5 cups water 15 oz reduced fat ricotta 2 cups shredded mozzarella, divided 1/4 cup parmesan cheese 1 package of Jimmy Dean pre-cooked turkey sausage crumbles 8 oz uncooked penne Preheat the oven to 400 degrees. Dump everything into a bowl (except for a cup of the mozzarella cheese) and mix it all up. Pour into a 9 x 13 pan (make sure spray it with Pam first!) and cover with foil. Bake it for 55 minutes. Remember how you saved half of the mozzarella cheese? Take off the foil and sprinkle the it on top. Then bake for another 5 to 10 minutes. That's it! This is one of the easiest pasta dishes to make and it's really good. It's great to take to someone who just had a baby or someone who's in need of a good meal. Throw in a caesar salad and some garlic bread and you're good to go! Happy Friday Eve!!
