Apple Kolaches - A sweet yeast pastry form Czech normally stuffed with either sweet of savory filling. It is quite time consuming to make but worth your effort. Adjust the sweetness that please your palate, all depend on what type of apple you've used. I like to experiment by adding different flavors to the filling. This dough won't rise much but you can proceed to bake after rising time, it will puff slightly during baking. Enjoy these Apple Kolaches after it came out of the oven. APPLE KOLACHES Yield : 20 kolaches 2 cups all purpose flour 1 1/2 tsp instant yeast 1/4 cup melted butter 1/2 cup plus 2 tablespoons warm milk 2 tablespoons sugar 1/2 tsp salt melted butter butter for brushing FILLING 1 1/2 cups finely chopped peeled apples 2-3 tablespoons brown sugar or to taste 1 tablespoon all purpose flour pinch of salt 2 tsp lemon juice METHOD Combine all ingredients except lemon juice in a saucepan. Cook on medium heat, stirring constantly until thicken. Remove from heat, add lemon juice. Leave to cool completely. DIRECTION Combine flour and instant yeast in a mixing bowl. In a small bowl, combine milk, butter, sugar and salt. Add milk mixture to the flour and forms into soft dough. Turn dough onto floured surface, knead by hand for 5 minutes. Place dough into greased and covered bowl, let rise for 1-1.5 hours. Lightly punch the dough, roll out dough about 1/8 in thick and cut into 1.5-2 in squares. Place a heaping teaspoonful of filling in the center, bring the two opposite corners to the middle, pinch tightly to seal. Place onto baking pan, brush with melted butter. Let sit for 45 minutes. Towards the end of rising time, preheat oven @ 185 C. Bake for 15-20 minutes until golden brown. Cool for 5 minutes before removing from pan to wire rack.
