This is a traditional dessert from Minho and Douro Litoral provinces. The pasta ( fine noodles or vermicelli) is used in this recipe for a sweet resembling rice pudding, portuguese style. It usually served in large serving dishes or in a bowl and then take out of it only when quite cold. Ingredients: 4 oz(90 gr) vermicelli, just crumbled 4 oz(110 gr caster sugar) 1/2 pint (300 ml) milk 3 egg yolks 2 tablespoons butter cinnamon 1 piece of lemon rind Preparation: Cook the pasta in plain water with a pinch of salt. Drain. Mix with the milk, sugar and lemon rind. Bring to the boil and simmer until creamy. Mix the butter and beaten egg yolks. Bring just to the boil for one second and remove from the heat. pour into a serving dish or in a bowl and dust with cinnamon. Serve cold.

After looking though 108 Fried potato recipes and seeing none that contain parsley, but no onions, I thought I would post this typically Portuguese version of fried potatoes. The mixture of oil and butter keeps things from burning, but for health reasons I usually use less of the butter. I allow between 30 minutes and 1 hour cooking time to get a more even colour that slower cooking gives and depending on the variety of potato used.

Its creator, Manuel Joaquim Machado Rebelo or, as he’s known, Priscos Abbot, despite the many virtues that he had, it was in the art of cooking that he has demonstrated his genius and, therefore, considered one of the greatest Portuguese cooks of the XIX century. He was also graced by His Majesty, King Luís of Portugal, with the title of Honorary Chaplain of the Real House in 1874, once the Abbot prepared great and sumptuous banquets for the royal family, prelates, ministers and aristocrats, during his lifetime. This is a typical pudding from Braga, Portugal and it was one of the finalists at the 7 Wonders of Portuguese Gastronomy.
