This beautiful Spumoni Elegante is a deluxe version of a frozen dessert classic: fruit-studded cream filling encased in a luscious layer of velvety egg custard.
I’d say this ice cream is more of a pudding than one for scooping on a cone (though by all means). Take it out of the freezer a good 30 minutes before you want to serve it and turn it out of its loaf tin onto a serving board. The caramelised filo bottom becomes the attractive top, and you can scatter with more nuts if you like, even a drizzle of honey. The texture of the filo gets in the freezer is so pleasing — much of it remains crunchy but some bits soften to become chewy and it’s just marvellous, every part.

Frozen yoghurt smoothie puddings are an ideal light dessert: low in sugar but still sweet and moreish, with frozen fruit, bananas, yoghurt and honey.
I love the classic affogato, which is simply HOT espresso poured over a scoop of vanilla ice cream. My parents would have it a lot in restaurants when I was growing up. It was the first time I remember seeing something hot go right over something cold and the enjoyment that moment can bring, as you eat melting ice cream and hot, almost cocoa-y coffee with it. This frozen version is also exciting. The brown sugar is a tasty touch. I recently ate at Torrisi Restaurant in New York City and the pastry chef served up a frozen version of this dessert that was a knockout. This recipe is inspired by that dessert, combined with my childhood memories of frozen hot chocolate from the famous Serendipity in NYC. The granita is supposed to be like a pleasantly slushy shaved coffee ice. Big coffee lover? Replace the vanilla ice cream with coffee ice cream. You can also just make and eat the granita with whipped cream…

A staff favorite, this cool dessert looks extravagant but is very easy to pull off, plus it’s completely make-ahead.
A semifreddo is not quite an ice cream, as the name — semi-cold, in translation — suggests. There's no custard to make, and no churning required as it freezes, which makes life very much easier. What you get is a smooth, soft block of chilled, almost frozen cream, with a texture of deep, deep velvetiness. This mellow, honey-flavoured version matches taste to texture. For some reason, sometimes when I make it, I end up with a block of uniformly buff cream; at others, I'm left with a honeyed, resin-coloured stripe along the base — or the top as it stands when you turn it out. But that's cooking for you. Either way, it works wonderfully. Pour more amber-coloured honey over as you serve, and scatter with toasted pine nuts, for quite the dreamiest, easiest pudding you could imagine. And please read the Additional Information section at the end of the recipe before proceeding. For US cup measures, use the toggle at the top of the ingredients list.
