Pandan extract is available from Asian grocery stores. The strength can vary between brands, so add it gradually. You can prepare the crèmes the day before serving – they need to be well chilled before you brûlée the top. You will need a kitchen blow torch for this task. Don’t be tempted to add too much syrup to the top of each crème – it will take too long to caramelise.

Bereiden: Neem een grote mengkom en voeg alle ingrediënten samen. Snij het vanillestokje open, schraap de zaadjes eruit en roer ze door het mengsel. Verdeel het in vuurvaste potjes en zet ze in een met water gevulde ovenschaal (au bain-marie). Zet de schaal 1 uur in een voorverwarmde oven op 100 °C. De crème brûlée zou nu moeten gestold zijn (en dus niet meer lopend). Als dat niet het geval is, zet de potjes dan nog een kwartiertje langer in de oven. Laat ze daarna een uurtje afkoelen. Strooi wat witte fijne suiker over de crème brûlée en verwarm de suiker met een bunsenbrander tot hij mooi bruin ziet. Laat nu ook het suikerlaagje even afkoelen, zodat het lekker krokant kan worden.
Crème brûlée is lekker. Crème brûlée met peperkoek is hemels. Dit is een dessertje om te maken en hermaken, steeds opnieuw. Iedereen zal er dol op zijn.

Source: Thomas Keller's Bouchon Notes: I just purchased a set of these mini Weck jars and love them especially for these pots de crèmes, which are traditionally baked in lidded vessels. The original recipe calls for using eight 5- or 6-oz pot de crème molds. Of course, if you have 4- or 6-oz ramekins, those will work, too. The mini Weck jars are much smaller (2.7-oz), which is kind of nice for such a rich dessert, but again, use what you have. Chocolate variation: Finely chop 6 ounces semisweet chocolate and place in a metal bowl. Then, in step 2, when you strain the mixture, strain it into a saucepan instead of a measuring cup. Heat the custard until it is warm, then pour it over the chocolate, let it sit to melt, then whisk it together until it has combined. Proceed with recipe.
