C’est l’automne, il faut en profiter pour cuisiner nos bonnes pommes. Ces biscuits sont moelleux, tendres et bien épicés. L’arome qui se dégage dans la maison pendant la cuisson est sublime et très réconfortante. Un hit auprès des enfants Biscuits aux pommes et aux épices 1 ¾ tasse de farine ½ c. à thé de sel 1 c. à thé de cannelle ½ c. à thé de muscade 1 tasse de compote de pommes 1 c. à thé de bicarbonate de soude ½ tasse de graisse (ou beurre) 1 tasse de sucre 1 œuf 1 tasse de flocons d’avoine Préchauffer le four à 375F. Dans un grand bol, battre ensemble la graisse, le sucre et l’œuf. Réserver. Dans un autre bol, mélanger la farine, les épices et le sel. Réserver. Dans un petit bol, mélanger la compote de pommes et le bicarbonate de soude, incorporer au mélange de graisse en alternant avec les ingrédients secs. Ajouter les flocons d’avoine. Bien mélanger. Déposer la pâte par cuillerée sur une plaque à biscuits tapissé d’un papier parchemin. Cuire sur la grille supérieure du four de 12 à 15 minutes. Source : Ma mère
Que dire de ces petits carrés aux raisins secs et à la crème sûre que j'ai vu passer chez Isabelle du palais gourmand ? Wow... C'est bien vrai qu'ils ne sont pas ordinaires. Il faut les essayer pour comprendre. Vous verrez comme ils sont extraordinairement bons! La recette vient du blog Les douceurs de Genny. Pour la cuisson, je n'ai pas fait pré-cuire la base du mélange (7 min.) avant d'y ajouter la garniture. Comme je préfère une croûte plutôt tendre, j'ai pensé que la base serait peut-être un peu trop cuite en la faisant pré-cuire avant. Finalement, j'ai bien fait d'omettre cette étape car j'ai obtenu des petits carrés ni trop cuits, ni pas assez cuits, parfaitement à mon goût. J'ai congelé quelques carrés pour ma boîte à dessert, toujours pratique pour les lunchs et collations. Pour faire des beaux carrés coupés à l'équerre, c'est un peu difficile. C'est la faute aux tis raisins dans la garniture qui ne savent pas de quel côté se positionner. C'est plus facile de les couper le lendemain quand la garniture est bien froide. Carrés aux raisins secs et crème sûre Ingrédients n°1 (base et dessus): 1 tasse (225 g) de beurre 1 tasse (200 g) de cassonade 1 1/4 tasse (170 g) de farine 1 cuil. à thé (4 g) de poudre à pâte 1 cuil. à thé (6 g) de bicarbonate de soude 1 1/2 tasse (150 g) de gruau Ingrédients n°2 (garniture): 3/4 tasse (150 g) de sucre 1/4 tasse (35 g) de farine 1 1/2 tasse (375 g) de crème sûre 2 tasses(300 g) de raisins secs** **note de Blanc-manger: Je fais tremper les raisins secs environ 10 minutes dans l'eau bouillante avant de les ajouter aux autres ingrédients. (les raisins sont plus tendres). Étapes: Préchauffer le four à 350°F. Bien mélanger les ingrédients du mélange n°1 avec les mains. Mettre la moitié du mélange dans un moule beurré 13x9 po. (moi, moule 12X8 po.) Cuire sur la grille du centre durant 7 minutes.(J'ai sauté cette étape). Pendant ce temps, mettre le sucre et la farine dans un chaudron et brasser au fouet. Ajouter le reste des ingrédients de la garniture et porter à ébullition. Quand le mélange à épaissit arrêter le feu. Verser la garniture délicatement sur la croûte et ajouter le reste du mélange n°1. Remettre au four pendant environ 25-35 minutes, tout dépendant de la force de votre four. Refroidir et couper en carrés. Note: Se congèle très bien. Source: Les douceurs de Genny imprimer la recette

It makes me want to sing and from now on when I hear that song I'm going to want this schnitzel! All the thanks goes to America's Test Kitchen because this is yet another wonderful recipe from that show. Yummmm... We had the schnitzels with brown butter noodles and homemade applesauce - in my opinion it was a perfect dinner! Pork Schnitzel 8 sliced white sandwich bread, crust removed and cut into small cubes 1/2 cup flour 2 eggs 1 tablespoon vegetable oil 1 pork tenderloin (about 1.25 lbs), trimmed of fat and cut on an angle into 4 equal pieces 2 cups vegetable oil for frying lemon slices for serving Place bread cubes on a large microwave safe plate and microwave on high for 4 minutes, stirring once halfway through. Microwave on medium power for 1-3 minutes, until bread is very dry and a few pieces start to brown (for me this was only 1 minute). Process bread cubes in food processor to very fine crumbs. Place bread crumbs in a pie plate and set aside. Place 1/2 cup flour in a pie plate and set aside. Combine eggs and 1 tablespoon of oil in another pie plate and beat together, set aside. Place pork with 1 cut side down, between 2 sheets of plastic wrap or in a gallon ziplock bag and pound to an even thickness of 1/8 - 1/4 inch. Season pounded pork cutlets with salt and pepper. Working with 1 cutlet at a time, dredge in flour, then in egg mixture (allowing excess to drip off to ensure a thin coating of egg), then in the bread crumbs, pressing on the crumbs to adhere. Place breaded cutlets on a wire rack over a cookie sheet and allow coating to dry for 5 minutes. Heat 2 cups of oil in a large Dutch oven over medium-high heat until a thermometer registers 375 degrees. Lay 2 breaded cutlets in the pan without overlapping and cook shaking the pan continuously and gently, until cutlets are wrinkled and golden brown on both sides, 1-2 minutes per side. Transfer cutlets to a paper towel lined plate and flip several times to blot up excess oil. Repeat with remaining cutlets. Serve immediately with a little lemon squeezed over each schnitzel if desired (I love it with lemon).

This super easy and fast recipe uses Lay’s Wavy Hickory BBQ which not only have their own seasoning but also have a little extra crunch because of the wavy cut. But if BBQ isn’t your thing, feel free to substitute another potato chip flavor like Lay’s Kettle Cooked Maui Onion or Lay’s Wavy Roasted Garlic and Sea Salt. I’ve also kept the seasoning in the sour cream coating to a minimum of salt and pepper because the Hickory BBQ has so much flavor. But if you want to customize it, feel free to add your own touch of spices to the sour cream along with the salt. For instance, if you like it a little spicy, try 1/4 to 1/2 teaspoon of cayenne pepper, or maybe you like garlic, in which case add 1 teaspoon of garlic powder. Have fun and make it your own! Of course, the hardest part of this recipe is refraining from eating the Lays chips instead of using them for the coating!
