J'ai adoré préparer ces petites merveilles toutes rouges et bien craquantes. Et, il n'y a pas à dire, ça fait son petit effet! Elles sont tout aussi belles et délicieuses que celles de la fête foraine. C'est certain que maintenant, j'en ferai souvent, parce qu’en plus, j'ai découvert que j'adore ça! Pommes d'amour: (d'après Le Pétrin) 6 pommes (Ariane) 400 g de sucre 120 g de sirop de glucose 150 g d'eau colorant rouge (en poudre) Laver et sécher les pommes. Piquer un bâtonnet en bois à l'intérieur. Dans une casserole, mettre le sucre, le glucose et l'eau. Mettre sur le feu et monter à 150°C. Une fois la température atteinte, retirer la casserole du feu et ajouter une pointe de couteau de colorant. Mélanger. Attendre une petite minute afin qu'il n'y ait plus de bulles. Incliner légèrement la casserole et tremper les pommes l'une après l'autre. Elle doivent être bien enrobée. Les laisser s’égoutter légèrement avant de les placer sur une silpat ou un papier sulfurisé. Laisser refroidir. Le mieux est de les manger le jour même. Plus tard, le caramel risque de fondre légèrement. Pour finir: le glucose est un glucide pur fabriqué à partir d’amidon de maïs ou de fécule de pomme de terre. Il a un pouvoir sucrant moins élevé que celui du sucre. En pâtisserie il est utilisé pour éviter la cristallisation du sucre. Il se présente sous la forme d’un sirop épais et incolore. Sa texture assez visqueuse. Il peut être enlevé de la recette, mais le résultat ne sera pas le même. On en trouve chez les pro, dans certains magasins spécialisés ou sur le net. J'utilise toujours des colorants en poudre qui sont très efficaces. Il en faut peu pour avoir une très jolie couleur. Adaptez la quantité selon le colorant que vous utilisez. Pour les piques, choisissez-les assez solides et d'une taille qui permet d' enrober les pommes sans risquer de se brûler. J'ai choisi d'utiliser des pommes Ariane car elles ne sont pas très grosses. C'est parfait. En plus leur croquant, leur légère acidité se prête à merveille à cette utilisation.
