It seems that this time of year seems to divide people into two camps: those who are already dreaming of pumpkin pie, apple cider, cozy sweaters, and all those warm and fuzzy things that go along with the fall season, and those who are not yet ready to say goodbye to warm weather, long days of sunshine, and abundant fresh summer fruits and veggies. I definitely fall into the latter camp; as much as I love fall, I always feel like summer’s way too short and I haven’t fit in enough peach/tomato/blueberry/corn/basil/etc. goodness yet! I also feel like I have a ton of summer recipes still to share with you guys and I’m running out of time to do so, so I’m trying to switch from two to three posts per week over these last few weeks of summer. So because I’ve spent more time than usual on blogging this week and also seem to have WAY more schoolwork than usual this week, I’m going to keep today’s post fairly short! This is a dense, hearty bread with bursts of sweet peaches and hints of warm spices throughout, so it’s perfect for this transition period from summer to fall. It’s also pretty healthy, made with whole wheat flour and oats, non-fat yogurt, and only 2 tablespoons of oil. I’ve been loving eating it for a snack every day this week just on its own, but I think it would be amazing toasted with fresh peach jam too! Whole Wheat Peach Oatmeal Bread Adapted from King Arthur Flour Whole Grain Baking, via Slow Like Honey Makes one 9x5 inch loaf Ingredients: 2-1/2 cups whole wheat pastry flour 1/4 cup sugar 1/2 cup packed brown sugar 1 tablespoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon kosher salt 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1 cup old fashioned rolled oats 2 cups diced ripe peaches (from about 3 peaches) 2 large eggs (I used Omega 3 eggs) 1 cup plain non-fat yogurt 2 tablespoons vegetable oil 1 teaspoon pure vanilla extract Directions: Preheat oven to 350°F. Line a 9 x 5 inch loaf pan with parchment paper and spray with cooking spray. Whisk together the dry ingredients (flour through oats) in a large bowl. Add the diced peaches and stir to coat the peaches. In a separate bowl, whisk the eggs, yogurt, oil, and vanilla extract. Add the wet ingredients to the dry ingredients, stirring until just evenly moistened. Pour the batter into the prepared pan and bake for 50-60 minutes, until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 to 15 minutes, then remove and let cool completely on a wire rack before slicing.

Italian bread is leavened with yeast, which needs to rise over a few hours. This will give the Italian bread a thin crust with a highly absorbent texture. This gluten-free homemade Italian bread recipe is super easy to make but takes time. You can’t rush the process of rising. I used a combination of carefully measured flours and starches in this gluten-free Italian bread recipe to get just the right texture and a perfect crust. The best way to measure flour is by using a scale. However, you can also use cups and tablespoons if you use them correctly. To measure flour using a cup, use a scooper to fill the cup and then level the flour off with a knife. Never dip the cup into the flour. If you decide to use gluten-free bread flour, make sure the flour is adequate for the Italian bread recipe. arrowroot starch vs tapioca starch You may have noticed that some recipes allow you to interchange arrowroot starch with tapioca starch. It would be best if you did not do it in this gluten-free bread recipe. Arrowroot starch is very different from tapioca starch. This is because arrowroot comes from Maranta arundinacea plant, a herb and tapioca is from cassava root. Although you can use tapioca starch, the bread will be denser and chewier. Therefore, I would not recommend using it in this gluten-free Italian bread recipe. rapid-rise instant yeast vs active-dry yeast For this gluten-free bread recipe, I used rapid-rise instant yeast. The yeast makes the recipe simpler with the same results. Rapid-rise instant yeast does not need to be proofed in warm water first because you can add it directly to dry ingredients. The only difference between the two is the water temperature you use to activate the yeast. For the active-dry yeast, the water temperature should be 110°F – 115°F. If yeast is added directly to the dry ingredients, water temperatures should be 120°F – 130°F easy steps to make gluten-free Italian bread You will love this recipe for its simplicity. To start, mix all the dry ingredients. Then add the warm water with olive oil, and using a spatula, mix to combine, creating a wet sticky dough. Allow the dough to rise for thirty minutes. This allows the flour to absorb the liquids making the dough easier to work with. The dough is now shaped into two loaves. However, you can also make round Italian bread or rolls. You will have to adjust the baking time — a little more for the round bread and less for the rolls. You will know by the crust. This recipe is a combination of two: Holly's Challah with the addition of vanilla and orange zest to the dough and the chocolate filling from the Chocolate Krantz Cakes in Jerusalem. A few notes: If you want more guidance making the dough, check out the Holly's Challah post first. You can use at least one cup of whole wheat flour or white whole wheat flour in the dough. (Holly always does.) To create lukewarm water: use ¼ cup boiling water and ¾ cup cold water, which will give you perfect lukewarm water. To create a warm place for your bread to rise: Heat your oven for 1 minute, then shut it off. It doesn’t matter what temperature you set it to when you heat it; the key is to only allow it to heat for 1 minute. This brief blast of heat will create a cozy, draft-free spot for your bread to rise. To break up the process a bit, you can stop after you roll the dough into coils or when you place the shaped loaves into the loaf pans, cover the pans with plastic wrap, and place in fridge. The following morning, if your dough is in coils, simply proceed with the recipe; if your dough is in the pans, bring it to room temperature — make sure dough feels soft to the touch and is filling the pan — before proceeding with the recipe.
