If you’re anything like me you will carve pumpkins every year for Halloween with the kids – it’s one of those fun, rainy day activities that seems to go down a treat in our house. Yes, we have the fancy pants pumpkins that mummy doesn’t let anyone touch, but we also have pumpkins for carving! Never one to be ok with waste, I always feel like I have to DO something with the left over pumkin, I mean, I can’t just bin it all and I don’t have a compost heap, so that leaves me fave thing: cooking. Pumpkin is one of those things I think you either love or you hate, and it’s so easy to associate it with pumpkin “spice” which is more spices and flavours and you lose the actual pumpkin (or so I think anyway). Savoury pumpkin goodness Pumpkin Cauliflower Gratin This looks delish, from Well and Full, it’s the kind of thing I would put on the meal planner with some bacon or sausages. Pumpkin Chilli You can’t go wrong with a classic Autumn recipe of chilli – whether you make it con carne or veggie, it’s always a winner. I love this twist from Will Cook for Smiles which adds in some yummy chunks of pumpkin. Perfect for anyone who doesn’t normally like pumpkins! This will make for great leftovers too! Morrocan Pumpkin Chicken This recipe from SunKissed kitchen sounds like something a little different from the usual pumpkin soup or pie and it’s absolutely something I think my kids would devour. Pumpkin Alfredo This is actually one of the more popular pumpkin dishes after pies and soups, it’s pretty tasty and a good way to get kids trying pumpkin! This recipe is from Yellowbliss road. Pumpkin Chicken Enchiladas Another one that I wouldn’t have ever really considered – I am impressed with this recipe from Skinny M’s, we love a mexican dish in this house and enchiladas are always popular! Pumpkin Gnocchi Edith actually really loves gnocchi, and even ate it when I did a soup the other week. What I’ve discovered is that pumpkin gnocchi is really easy to make! It seems like a great twist – this recipe is from Sweet Simple Vegan. Pumpkin Lasagne Yes sir! Pumpkin lasagne is a thing – a damn good thing too to be honest. I think it adds a creamy twist – you can either make this veggie version from Ambitious Kitchen or use pumpkin as an addition to your main meal. Pumpkin soup This classic soup from Savoury nothings is easy and filled with simple tasty ingredients. Pumpkin bread Never tried it, always wanted to. I’m living for this recipe – just look at that bread! Warm toasted and some apple pie filling spread on. NOM. Recipe from Life Love and Sugar. Sweet somethings! Pumpkin pie Starting with the obvious choice – I have a confession to make: I’ve never made a pumpkin pie. No really, never. I would absolutely love to make some this year – it looks lush from Sugar and Spice. Pumpkin spice truffles Now frankly these are something I would never have even considered and I love it! LOVE it.
