A chaque fois que je rencontre un passionné de référencement, il commence toujours par me dire la même chose… Tes titres tu veux pas les faire chouilla plus court et chouilla plus descriptifs ? juste histoire que ton référencement… C'est pas compliqué quand tu fais une crème, tu marques crème comme titre ! juste crème ! Et puis après… après… et là généralement j'ai droit à un bon nombre de bons conseils sur tout le reste les titres encore et puis l'article et les paragraphes et ce qu'y'a dedans et… et... Des conseils qui d'ailleurs sont souvent bons et pendant lesquels je hoche la tête comme les chiens à l'arrière des voitures. Et quand la séance est terminée, je me bats le poulpe, je crache par terre et jure comme un charretier que jamais plus jamais… Le problème c'est qu'après j'ai mon Jiminy du long titre qui me susurre à l'oreille que si je disais qu'elle est passionnée ma p'tite crème ça s'rait quand même mieux et puis que le soir y'a de l'espoir, sans trop savoir de quoi il est l'espoir en question d'ailleurs, mais que c'est bien de le dire parce que l'espoir c'est quand même vachement bien et puis et puis… Et au total, parce que forcément je l'écoute, moi je me retrouve encore avec un titre qui fait presque la moitié de mon article. Et là au lieu de couper court, j'me dis seulement y f'ra mieux demain ! En attendant demain p'tite crème au programme de la catalane et de la passionnée. Crème catalane du soir espoir surtout quand elle est aussi passionnée ! Ingrédients : 50cl de lait - 4 jaunes d'œufs – 90g de sucre en poudre – 30g de Maïzena –1tige de vanille – le zeste d'½ citron en lanière – du sucre pour caraméliser – 4 ou 5 fruits de la passion selon leur taille – 2càs de sucre blond en poudre - 1 feuille de gélatine Commencez par vous occupez de la passion. Videz les fruits de la passion dans une casserole, ajoutez le sucre blond en poudre et portez le tout à ébullition puis laissez frémir pendant 3 ou 4 minutes. Filtrez le mélange, insistez bien pour recueillir le plus de jus possible. Réchauffez rapidement ce jus dans la casserole, retirez du feu puis ajoutez la gélatine essorée et remuez jusqu'à ce que la gélatine soit bien diluée. Versez dans le fond de chaque assiette une cuillère à soupe de gelée de fruit de la passion et laissez prendre. Préparez ensuite la crème. Faites bouillir le lait avec la vanille fendue en deux et grattée dedans et le zeste de citron. Dans un saladier, fouettez le sucre, la maïzena et les jaunes d’œufs jusqu’à ce que le mélange blanchisse. Enlevez du lait chaud la gousse de vanille et la lanière de citron et versez-le en filet en le filtrant sur le mélange tout en fouettant (normalement là vous avez trois bras !). Reversez la crème dans la casserole et chauffer-la à feu doux en mélangeant constamment jusqu’à ce qu’elle épaississe. Puis laissez-la refroidir Versez la crème dans les plats. Laissez refroidir. Versez du sucre sur les crèmes et avec un fer, un quemador, faites caraméliser le sucre. Si vous n'avez pas de fer à caraméliser vous pouvez utiliser un chalumeau de cuisine ou passer la crème sous un grill brûlant, mais avis personnel rien ne remplace le fer qui permet de caraméliser le sucre sans réchauffer la crème. Mangez sans attendre. Vous pouvez préparez la crème dans les assiettes à l'avance et caraméliser au dernier moment. Ne vous inquiétez pas de la pellicule plus ferme qui va se former sur la crème sous l'effet de la chaleur elle disparaîtra. Passionate Catalan custard Ingredients: 50cl milk - 4 egg yolks - 90g caster sugar - 30g cornstarch - 1 vanilla bean - 1/2 lemon zest in strips - sugar - 4 or 5 passion fruits (depending on their sizes) - 2 Tbsp light brown sugar - 1 edible gelatine sheet Start taking care of the fruits. Pour the pulp into a saucepan with the light brown sugar and bring to the boil. Then let simmer for 3 or 4 minutes. Filter pressing on hard to get as much juice as you can. Quickly heat the juice back in the saucepan. Take off the heat and add the gelatine (previously soaked in cold water and then squeezed) and stir until the gelatine is well dissolved. Put a tablespoon of that juice in the bottom of each plate and let set. Then make the custard. Bring the milk to the boil with the vanilla bean, halved and scraped and the lemon zest. In a large bowl, whisk the caster sugar with the cornstarch and the egg yolks until pale. Remove the vanilla bean and zest from the hot milk and slowly pour it on the previous mixture… through a sieve (yep, you might want to grow a third arm). Pour the cream back in the saucepan on low heat and constantly stir until thickened. Let cool down. Pour in the plates and let completely cool down. Sprinkle some sugar on top and, with a quemador (an iron), have the sugar caramelise. You can also use a blow torch or quickly put the custard under very hot grill. I personally think nothing’s better than a good old iron for it doesn’t heat the custard. Eat immediately. You can have the custard ready in the plates in advance and caramelise the top at the last minute. Don’t worry if you see a thin layer forming on the custard with the heat, it will disappear. Mais pourquoi, et d'abord si on dit pas qu'il y a de la passion c'est pas la même chose non ? non ??? est-ce que je vous raconte ça…
I know that buying a blowtorch might seem a waste of money, and given that I use it only a few times a year, perhaps it is, but for some reason I've never been able to caramelise a Crème Brûlée under a grill properly. I think that perhaps I get too impatient and stick it under the grill before it becomes requisitely scorching hot. The grill element is also quite high in comparison to the tray so the Crème Brûlée ends up overcooked and the sugar just only slightly caramelised. Although many recipes say that you can do this under a grill so by all means try it there before shelling out for the heavy duty equipment. I admit I am a little frightened of using my blowtorch as I am just too clumsy for it. I also feel like I need a Welder's mask and of course my train of thought immediately goes to Flashdance and before I know it I'm singing the Flashdance theme and pretending to be a welder cum dancer. And thus you can see why I shouldn't be wielding a blowtorch. And why I close the curtains when I do so.
