Sprinkel ‘n bietjie van die klapper op die foelie. Meng gesmelte botter of margarien, karamel kondensmelk, vrugtemengsel en fyn Marie beskuitjies. Druk eweredig in die voorbereide pan vas. Besprinkel met klapper en verkoel tot ferm. Lig die foelie uit die pan. Sny in blokkies en geniet saam met koffie. Like many of you out there, I am addicted to Pinterest. It's such a great resource for everything under the sun - I love it! Whoever thought of it is a genius......why couldn't it have been me??? This past weekend we were having family over for dinner, and I decided I wanted to try something new for dessert. So I went on Pinterest and searched for popular dessert recipes and came across this one called "Crunchers". It was "pinned" a lot on Pinterest so I figured I'd give it a try. I didn't know what to expect as I read over the ingredients. I was worried it would be too sweet, so I was pleasantly surprised that it wasn't. Instead, it has that sweet & salty combination that I really like and it wasn't overly sweet at all. The youngest pickiest eater in our family said it was "delicious", so I'd say it was a hit! I will file this one away and I'm sure that I'll be making it again - thank you Twirl and Taste! Crunchers (by Twirl and Taste) box of saltine crackers 1 cup butter 2 cups graham cracker crumbs 1 cup packed brown sugar 1/4 cup white sugar 1/2 cup milk 1/2 cup creamy peanut butter 1/2 cup butterscotch morsels 3/4 cup semi-sweet chocolate morsels Line a 9x13 baking dish with aluminum foil, leaving extra hanging over both ends, and spray with cooking spray. Line the bottom of the dish with saltine cracker. Melt the butter in a medium saucepan, then stir in the graham cracker crumbs, both sugars and milk. Bring to a boil, then continue to boil for 5 minutes stirring constantly. Remove from heat and spread half of the butter mixture over the saltines. Place another layer of saltines evenly over the butter mixture, then spread the rest of the butter mixture over the saltines, and top with another layer of saltines. In a small saucepan combine the peanut butter, chocolate & butterscotch morsels. Melt over medium-low heat, whisking constantly, then spread evenly over the saltines. Cover the dish with plastic wrap and place in the refrigerator for at least 2 hours. Remove from pan using the foil overhang, then cut into bars.

Enough of pumpkin, it's time for coconut! Okay, I have nothing against pumpkin, but it's time to include other ingredients in my meals. Seriously. I've been eating pumpkin almost everyday. I haven't made cheesecake for a long time and when I saw a lonely can of cream of coconut in my counter, I realized that it's time to bake a coconut cheesecake. And I wasn't wrong. It was a perfect time. In fact, it's always a perfect time for a cheesecake. And the result? Absolutely perfect. Creamy, smooth, not too sweet, light and without a single crack on top. But the best part... was the frosting. It was TO DIE FOR. Really, it was the most delicious coconut frosting ever. You must try this cheesecake. And you MUST try this coconut frosting. That's all you need. Coconut Cheesecake Crust: 150g (~1 1/2 cup) graham cracker crumbs (any other cookies work as well) 60g (2oz) butter, melted Filling: 1 kg (4 8oz packages) cream cheese 200g (1/2 can) coconut cream (unsweetened) 225g (1 cup) sugar 3 large eggs, lightly beaten 1 tsp vanilla extract 15g (1 tbsp) cornstarch Frosting: 200g (1/2 can) coconut cream (unsweetened) 60g (2oz) powdered sugar 1) Mix together graham cracker crumbs with butter and press into the bottom of a springform pan. Refrigerate while you prepare the filling. 2) In a bowl, beat together cream cheese and sugar. Add coconut cream, eggs, vanilla extract and cornstarch. Mix just until smooth. 3) Pour onto the crust and bake in a 180C / 350F preheated oven for 15 minutes. Reduce the heat to 120C / 250F and bake for another 60-90 minutes. 4) Let cool completely, preferably overnight. 5) For the frosting, beat together coconut cream and powdered sugar until creamy. My husband loves Nanaimo bars. When I make these, I could ask for jewelry and he won't even bat an eye. These really need a naughtier name than Nanaimo Bars - like maybe Passion Pucks (to keep the Canadian theme going) or Sex Squared. Seriously, they're that good. Heralded as "a BC Specialty" or, "Canada's Favorite Confection", Nanaimo Bars are a little slice of home. Some cretins people on the East Coast call them "New York Special" but never in my presence. Canada has few unique native dishes and tagging this with an American moniker just will not do. (Don't flame me, I'm just telling it how it is.) This recipe is easy enough, but it is a little time consuming as you need to chill each of the layers. One bite though and the effort will be forgotten. Bottom Layer (Crust): 1/2 C (1 stick) softened butter (Use softened butter so you can keep the heat low and reduce the risk of cooking the egg before it's mixed in.) 1/4 C white sugar 1/3 C cocoa powder 1 large egg, beaten 1 tsp vanilla 2 C graham cracker crumbs 1 C coconut (either sweetened or unsweetened) In a saucepan over low heat, melt the butter. Stir in the sugar and cocoa powder: and then gradually whisk in egg. Cook, stirring constantly, until the mixture thickens (1 - 2 minutes). Remove from heat and stir in vanilla, graham crumbs and coconut: Press the mixture evenly into buttered or sprayed 9x9 pan. Cover and refrigerate until firm (about an hour). FILLING (middle layer) : 1/4 C softened butter 2 - 3 TBL milk or cream 2 TBL vanilla custard powder (Bird's) or vanilla pudding powder 1/2 tsp vanilla 2 C powdered sugar In your electric mixer cream the butter. Beat in the remaining ingredients. If the mixture is too thick to spread, add a little more milk. Spread the filling over the bottom layer, cover, and refrigerate until firm (about 30 minutes). TOPPING: 4 oz semisweet chocolate, chopped (chips work fine, use more if you like a thicker top layer) 1 TBL butter (scale up if using more chocolate) In a heatproof bowl over a saucepan of simmering water, melt the chocolate and butter. If the chocolate seems too stiff, add a touch more butter. Spread chocolate over the filling and refrigerate. Be careful here, if the chocolate is too hot or you haven't chilled the filling enough you'll get greasy pools of unappetizing yuck. The best way to do this is to spread a spoon full at a time and be careful not to reach down into the custard layer with your spatula. If you look carefully at the bottom right corner you can see where I let a glob of warm chocolate sit too long and the filling surfaced. Chill until chocolate has set. These bars slice best at room temperature, but taste best a little cold from the fridge. I'm usually willing to forgo perfect squares in the name of luscious texture, but if appearance is important, let these warm up a bit before cutting. Other Options: Add mint, peanut butter or coffee flavor to the filling. Just pick one though - Mint, Peanut butter, Coffee Nanaimo Bars would be unpleasant :-) If using mint, omit coconut.
