These savoury sables will be perfect on a cheese platter, maybe with some brie cheese, marinated olives and spicy sweet nuts. Sables is french butter cookie that has a shortbread-like crumb. My version is extremely easy to make, and these sables will be so much more sophisticated than cheese crackers on a cheese platter for sure. You may notice that I have left the measurement for the parmesan and olives in volume (cups) rather than weight (grams). This is because the amount of these ingredients does not need to be exact, and you can adjust them to your taste. I’m not a huge fan of rosemary, but these savoury sables do need a touch of herbs. So I added a rosemary leaf to each biscuits, just enough to lightly perfume these biscuits. If you don’t mind rosemary, go ahead and add 1-2 teaspoons finely chopped rosemary into the flour mixture. Savoury Sables Makes 24 numbers of 5cm diameter cookies. 200 grams plain flour 1 cup grated parmesan cheese 1/2 cup finely chopped pitted black olives Black pepper 150 grams unsalted butter Fresh rosemary to garnish Sea or rock salt Cut butter into small (about 5cm) cubes and allow to soften. This step is especially important as the butter needs to be really soft. Cutting the butter into small cubes helps soften the butter quickly and makes it easy to incorporate the butter into the flour mixture later. Line a baking tray with baking paper. In a large mixing bowl, combine flour, parmesan, olives and a grinding of black pepper. Knead the butter into the flour mixture with your hands until the ingredients are evenly distributed and a ball of dough has formed. Do not overwork the dough. Shape into a 10cm (diameter) round. Wrap in cling wrap. Refrigerate for at least 2 hours or until firm. Roll dough out between 2 sheets of baking paper to 4mm thick. Using a 5cm (diameter) fluted cutter, cut out biscuits. Place onto prepared trays. Re-roll leftover dough and repeat. Sprinkle each biscuit with salt. Lightly press one rosemary leaf on each biscuit. Freeze biscuits for 10 minutes while waiting for oven to heat up. Heat the oven to 180 degree celsius fan force. Bake biscuits for 15 minutes, or until golden. Allow to cool on trays for 5 minutes before transferring to a wire rack. Store biscuits in an airtight container for up to 4 days.

Pour le week end, et pour fêter le retour du soleil qui est enfin annoncé, je vous propose de réaliser de délicieux sablés à déguster au moment de l'apéritif. Le fromage a toujours sa place sur mes tables d'apéritif. Je suis certaine qu'il en est de même pour vous. On aime le picorer juste comme ça. J'ai aussi un très gros faible pour ces sablés. Habituellement, j'avoue qu'ils sont un peu plus simples et moins décorés que ça. Mais là, j'avais vraiment envie de mettre en valeur les jolies herbes fraîches de mon jardin. Marjolaine, sauge, sarriette, romarin, thym... Le mariage des herbes et du fromage est toujours excellent. Du coup, en plus d'être bons, ces sablés sont aussi très jolis. Rassurez-vous, c'est toujours très simple à faire. Mes sablés sont à l'Appenzeller, un fromage suisse que je viens de découvrir. Très souvent, j'utilise du cantal entre-deux ou du parmesan. Il y a toujours l'un ou l'autre dans mon frigo. On peut aussi utiliser du comté, du gruyère, du cheddar... C'est comme vous voulez. Dans tous les cas, le succès est garanti. Sablés apéritifs au fromage et herbes fraîches: 70 g de fromage (à pâte dure) 180 g de farine 80 g de beurre 1 œuf 1/2 cc de sel herbes fraîches (marjolaine, sauge, sarriette, romarin, thym...) Râper le fromage. Dans le mixeur, mélanger la farine et le beurre. Vous obtenez un sable. Ajouter le sel, le fromage, l’œuf et environ 2 cuillère à soupe d'herbes finement ciselées. Pétrir sans insister. Mettre la pâte sur le plan de travail et faire une boule. Filmer et réserver au frais pendant au moins 30 minutes. Préchauffer le four à 180°c. Étaler la pâte en restant assez épais. Pour que ce soit plus facile, j'utilise une feuille de papier sulfurisé. Déposer des herbes de façon à les avoir au centre du futur cercle. Passer un léger coup de rouleau dessus puis découper avec un emporte-pièce de 5/6 cm. Recommencer jusqu'à ne plus avoir de pâte. J'en ai fait 15. Répartir les sablés sur la feuille de cuisson et faire cuire 15 à 20 minutes. Servir froid avec des morceaux de fromage. Pour finir: la cuisson varie en fonction de la taille et de l'épaisseur des sablés. Moins cuits, ils seront plus fondants. Plus cuits ils deviendront plus croustillants. Si vous ne voulez pas faire la déco avec les herbes, il est possible de faire un gros rouleau de pâte avant de la mettre au frais. Ainsi, il n'y aura pas besoin de l'étaler. Il suffira de la sortir du frigo et couper des tranches épaisses.

This is my own family recipe for the traditional Algerian 'Sables' cookies. These sables are very easy to make & are a real favourite in our home. We like them with strawberry jam filling & icing sugar dusting or with apricot jam filing & dessicated coconut finish... but you can use any of your favourite preserves (if they have fruit pieces in you should sieve them before using. I have a special 4cm fluted sables cutter but you can use any cutters. I oftern use star cutters then punch out the small round centre by using a small metal bottle top (like on food colourings), or round cutter & using a small star, heart or flower cutter for the centre. These sables freeze nicely in layers separated by parchment or waxed paper in an airtight container. Allow to defrost in a single layer then dust the tops & fill with jam.

Transfer to a wire rack to cool. Turn the own back on to 375°F and continue with the remaining dough.
