I love making cookies for them.John loves my peanut butter cookies and I needed to find something that Elsie might enjoy. Chinese Grandma posted this recipe in 2012. She has lots of photos that show you the step by step process in making the cookies. Ingredients: 2 1/2 cups rolled oats (old-fashioned or quick-cook, not instant)* 1/2 cup (1 stick) butter, melted 1 cup firmly packed brown sugar 1 egg, lightly beaten 1/4 teaspoon salt (if using unsalted butter) * For gluten-free, check oatmeal before you purchase. Oatmeal should be gluten-free but is often processed in a facility that processes wheat or other grains with gluten. Directions: Preheat oven to 350 degrees F or 177 degrees C. Grease or spray baking sheets very well or line with parchment paper. Mix ingredients together in a large bowl. Drop by teaspoonfuls on prepared baking sheets, forming circles. Leave space in between for cookies to spread. Bake 9-12 minutes, until cookies spread out and cookies are golden brown. Leave the cookies on the cookie sheet a few minute before removing. Remove and place on rack to cool. Elsie was thrilled with the cookies! I also gave a few to one of the boys who came for a treat and when I heard the mailman I ran out. Robert, our mailman is quick and he was almost gone when I got to the end of the driveway and yelled his name. I never knew mail trucks had such great brakes !
