It’s been a trying week in my kitchen, and it’s only Wednesday. To start out the weekend, I discovered the door to our stand up freezer in the basement was left ajar for a couple of days. It needed a good cleaning out anyways, but still, talk about a waste. Then, to make matters worse, when cooking dinner on Friday evening – the propane tank that fuels the cook top ran out. We only have to have it filled once a year, and I guess it just slipped my mind. That meant going until Monday without a propane delivery. Thankfully, we have a beast of a grill with a handy side burner. It’s saved our butts more times than I can count when we’ve been without electricity for an extended period of time. However, one thing that I couldn’t do on my trusty grill was preserve the 15 lbs of strawberries we picked on Saturday afternoon. So, we went over to my Mom’s house yesterday to can, and it was a great afternoon. Mom always enjoys spending time with the boys, and it was nice not to have them pulling on my apron strings when I was in the process of canning. Hot jars + boiling water + toddlers just makes me nervous! I couldn’t be happier with how this jam turned out. At first taste, it’s pure delicious strawberry. But, comin’ up from behind is a lovely smokey, slow burn from the chipotles. I intended to do one batch of this, and one batch of a traditional strawberry jam. But, I loved this so much that I went ahead and did a double batch. I can’t wait to try it mixed into BBQ sauce, brushed onto grilled pork, or making a fun dipping sauce for coconut shrimp. Definitely plan on entering this one into my local fair come August! Print Strawberry Chipotle Jam 6 cups strawberries, washed and halved 1 (7 oz) can chipotle chiles in adobo (I used about 3/4 of a can) 6 1/2 cups granulated sugar 1/4 cup lemon juice 1 package powdered pectin In a food processor or blender, process the chilis and berries in a food processor (pulse), being careful not to over process, you want some pieces of berry. Pour berry mixture, lemon juice, and pectin into a large pot. Cook, over medium-high heat, stirring frequently until mixture comes to a boil. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Immediately pour the hot jam into hot jars and put the lids on. Use a really crunchy cucumber to start. Either Persian or Japanese cucumbers. Or a good English cucumber if you can't find the other varieties. Personally, we rarely find good, crunchy "Pickling" cucumbers so we always pass on using them. But if you find or grow nice ones, they'd work great too. We let the cucumber slices sit out overnight covered in paper towels after salting them to help them dry out a bit more and develop a nice crunch. They may look a little too dried out in the morning, but when you add them to the vinegar mixture, they will re-hydrate perfectly. If you are pressed for time you can skip the overnight drying, but your pickles won't have the same crunch. Feel free to adjust the sugar to your preferred sweetness. We've made it anywhere from 3/4 cup of sugar to 1 1/2 cups and have had people prefer it on each end of the sweetness spectrum.Makes about 6 cups of pickles.

Je vous le jure, c'est ma mère qui détient la meilleure recette de cornichons sucrés ! En plus, elle y ajoute des choux-fleurs... OH MY GOD ! Il paraît qu'on se battait pour avoir les choux-fleurs quand on était petits, et je n'ai pas de misère à le croire. Pourtant, les cornichons aussi sont délicieux. Bon voilà... je vous présente ma recette de marinade préférée :) 2 pots de 1 litre (on peut facilement doubler ou tripler la recette) 12 cornichons (un panier de 3 litres) tranchés épais (1/4 pouce) 1 chou-fleur détaillé en petits bouquets 1 tasse de petits oignons blanc pelés (facultatif... pas mis) 1/3 tasse de gros sel 10 cubes de glace Déposer les légumes dans un grand bol. Saupoudrer le sel sur ceux-ci et y déposer les cubes de glace. Laisser reposer 2h30 à température ambiante. Égoutter. 3 tasses de vinaigre blanc 4 tasses de sucre 2 c. soupe de graines de moutarde 1 1/2 c. soupe de curcuma 10 grains de poivre concassés 3 clous de girofles entiers Une pincée de gingembre moulu 1 bâton de cannelle Dans un grand chaudron (d'environ 4 litres), mélanger tous les ingrédients ci-dessus et y ajouter les légumes égouttés. Bien mélanger, couvrir et porter à ébullition. Laisser bouillir pendant 5-10 minutes. Pendant ce temps, faire chauffer des pots Mason bien propres (sans les couvercles !) au four à 325°F pendant 10 minutes. Déposer les couvercles Snap dans de l'eau très chaude mais non bouillante. Lorsque les pots sont bien chauds, y déposer la marinade encore bouillante à l'aide d'une louche et d'un large entonnoir. Déposer les couvercles Snap sur le dessus et visser la bague sans trop serrer. Traiter à l'eau bouillante 10 minutes. Laisser refroidir. Les couvercles devraient "popper" durant le refroidissement. Laisser mariner 1 mois avant de déguster (si vous en êtes capable !!). Conserver dans un endroit frais et sombre et réfrigérer une fois ouvert.
