Talán kicsit extrémnek néz ki ilyen rikító zölden ez a palacsinta, de tényleg gyönyörű színe van! Korábban készült már nálam szivárványszínű lepénykenyér, amit egy fantasztikus szendvicsben ettünk. Receptje ITT. A palacsintának spenót adja a színét. Hozzávalók (12 darabhoz, 23 cm-es palacsintához): 75 g (bébi)spenót levelek (megmosva, megszárítva) pici csokor petrezselyem (mosva, szárítva) 1/2 tk. só 500 ml rizstej 3 L-es tojás 100 g tönköly finomliszt 80 g zabpehelyliszt 1 ek olívaolaj + még egy kevés a sütéshez Csak akkor érdemes nekiállni, ha van otthon egy jó erős turmixgép, amivel zöld turmixokat lehet készíteni. Mert az nem megoldás, hogy csak kicsit turmixolja össze a spenótleveleket. Nekem egy tefal levesfőzőm van, azzal szoktam turmixolni és az szuper. A palacsintatészta a turmixgépben készül: beleteszem a spenótleveleket, petrezselymet, sót, rizstejet, tojásokat, liszteket és olívaolajat, majd alaposan összeturmixolom. Nálam kétszer futott le a zöld turmix program (2*1.5 perc), tutira akartam menni, így kicsit habos is lett a végeredmény. A serpenyőt forrósítom, ecsettel megkenem olajjal. Közepes lángra állítom. Nagyobb merőkanálnyi adagot merek (65-75 g). Ha azt akarom szép zöld legyen akkor csak egyik felét sütöm meg! Lentebb a feltekert képeken lehet látni milyen, ha mindkét oldala megsül. Belül úgyis szép zöld lesz. A sós verzióhoz: egy nagy lyukú reszelőn lereszelt cukkinit pici olívaolajon, petrezselyemmel, sóval és 1 gerezd aprított fokhagymával összesütöttem. 2 marék zöldborsót pároltam. Került bele egy kevés krémsajtos-mascarpone (nagyjából 1-1 arányban, pici só és borssal) A gyerekeknél a nutellás verzió volt nyerő. Tényleg nem érezni a spenótot (a petrezselymet meg végképp nem), szóval bátran ajánlom lekvárral is (én bodzalekvárral ettem) vagy éppen mogyoróvajjal, banánnal, málnával is nagyon finom lehet!
