La zeppole sono una delle tradizioni irrinunciabili per un calabrese DOC, è un impasto lievitato di farina e patate che viene fritto. Si consumano al pranzo della vigilia per mantenersi ''leggeri'' per il cenone di Natale e poi via via si consumano nei giorni seguenti come sostituto del pane oppure quando si ha un languorino. Le zeppole accompagnano tutti i pasti di tutto il periodo natalizio, quindi si usa produrne grandi quantità, durano un paio di giorni e personalmente le preferisco il giorno dopo. Un'immagine simbolo che porterò sempre con me, è la pentola in cui viene messo l'impasto a lievitare vicino ad una fonte di calore. Quando ero piccola la fissavo e non vedevo l'ora che l'impasto fosse pronto, fin quando lo scoperchiavo e vedevo magicamente la pasta che voleva sdrabordare...che emozioni! Gli ingredienti sono per circa 2 kg di prodotto finale, possono bastare per circa 8/10 persone. Colgo l'occasione per Augurarvi a tutti un Felice e Sereno Natale!!!!!!! Ingredienti: 1 kg farina 00 (più circa 200 gr se la patata è troppo morbida ed assorbe troppa farina) 1 kg patate 30 gr lievito di birra acqua 10 gr circa di sale Inoltre abbondante olio di semi per friggere Procedimento Lavate le patate e mettetele a bollire con tutta la buccia. Una volta cotte pelatele e passatele nello schiacciapatate, salatele leggermente. Riempite a metà una tazza d'acqua tiepida, scioglietevi il lievito ed aggiungete il sale. Versate 1 kg di farina in un recipiente capiente, fate un buco nel mezzo e versatevi le patate schiacciate con l'acqua dove è sciolto il lievito; iniziate ad amalgamare con le mani, l'impasto sarà molto appicciccaticcio, lavorate con i pugni per amalgamare bene il tutto. Aggiungete piano piano i 200 gr di farina se l'impasto è troppo molle, che comunque non cambierà di molto. Mettete il composto in una pentola alta almeno 20cm, ecco come si presenta coperchiate, avvolgete in una coperta e fate lievitare vicino ad una fonte di calore. Ecco a lato la mitica scena. Dopo circa 1 ora e mezza, quando l'impasto sarà ben lievitato, quindi arriverà al bordo del recipiente Mettete in una padella abbondante olio, quando sarà abbastanza caldo bagnatevi le mani ed iniziate a fare delle ciambelle prendendo dei pezzi di pasta e modellandoli.
