วันนี้เรามีสูตรอาหารสร้างอาชีพมาแนะนำ นั่นก็คือวิธีการทำ “ขนมจีบหมูเด้ง” (สูตรครูออม) ซึ่งสูตรขนมจีบหมูเด้งนี้ ได้รับการเปิดเผยส่งต่อมาจากคุณกบ “ประภัสสร แดงสกุล” มีรายละเอียดและวิธีการทำ ดังต่อไปนี้ค่ะ ..”สองวันมานี้ ได้รับเกียรติจากครูออมให้เข้าไปศึกษาเรียนรู้ในการทำขนมจีบต้มค่ะ และครูออมก็ได้อนุญาตให้พี่กบจดสูตรมาลงให้สมาชิกลอกการบ้านได้ค่ะ” ตามนี้นะคะ สมาชิก ใครอยากลอก อยากจด ตามใจเลยค่ะ *สูตรขนมจีบ โดยครูออม 1.สันคอหมูบด 2,000 กรัม (บดละเอียด สัก 2 – 3 รอบ) 2.มันหมูบด 1,500 กรัม (บดละเอียด สัก 2 – 3 รอบ) แช่เย็นจัด/ฟรีสไว้ให้เย็น 3.เนื้อปลายี่สกขูด 750 กรัม แช่เย็นเหมือนกัน 4.แป้งมัน 100 กรัม 5.แป้งถั่วเขียว 50 กรัม 6.น้ำมันหอยนางรม ตราเด็กสมบูรณ์ 260 กรัม 7.ซีอิ๊วขาว 100 กรัม 8.น้ำมันงา 50 กรัม 9. เหล้าจีน 40 กรัม 10.พริกไทยป่นสีขาว สำเร็จรูป 15 กรัม 11.เกลือ 1 ช้อนชา 12.น้ำตาลทราย 200 กรัม 13.รากผักชีตำละเอียด 30 กรัม 14. แผ่นเกี้ยวสำหรับทำขนมจีบ 2 ห่อ 15.น้ำมันพืชรำข้าวคิง 1 ขวด (ใช้สำหรับคลุกขนมจีบต้ม) ปล. ถ้าชอบแบบเจ้มจ้น ให้เพิ่มหอยนางรม 30 กรัมและซีอิ้วขาวอีก 20 กรัมค่ะ *วิธีทำขนมจีบหมูเด้ง 1. เตรียมส่วนผสมข้อที่ 4 – 13 ใส่ชามคนให้เข้ากันจนน้ำตาลละลาย 2. ส่วนของหมู ข้อ 1 – 3 ใส่เครื่องนวด 2 แขน (ในส่วนของหมูต้องแช่เย็นไว้ก่อน จนเย็นจัด ถึงนำออกมาใส่เครื่องตี เพราะจะทำให้เนื้อหมูจะได้เหนียว นุ่ม เด้ง 3. ตามด้วยส่วนผสมในข้อที่ 1 เทใส่ลงไป เปิดเครื่องตี นวดจนส่วนผสมเข้ากันดี จนกระทั่งรวมเป็นเนื้อเดียวกัน เหนียวนุ่ม ระหว่างเครื่องกำลังทำการนวดหมู ให้ใช้ไม้พายช่วยปาดเนื้อหมูเข้าไปรวมกัน 4. สังเกตุว่าเนื้อหมูนุ่มได้ตามที่เราต้องการแล้ว ให้ปิดเครื่อง ก็เอาออกมา ห่อแผ่นเกี๊ยวทำขนมจีบได้เลย 5. แผ่นเกี๊ยว 1 แผ่น ตักเนื้อหมูบดวางลงตรงกลางแผ่น จับจีบห่อได้ ให้แผ่นเกี้ยวห่อหมูให้หมด (จะห่อแบบไหน จีบแบบไหนก็ได้) วางเรียงไว้ในถาด ทำจนหมด 6. เตรียมน้ำเปล่าสะอาด ใส่หม้อ ตั้งไฟ จนกระทั่งน้ำเดือด 7. เตรียม กาละมัง หรือหม้อ หรือถาด อีกใบ ใส่น้ำมันพืชรำข้าวไว้ (สำหรับนำขนมจีบที่ต้มเสร็จแล้ว เอามาคลุกกับน้ำมันพืชอีกที แบ่งเทลงพอประมาณที่คลุกเคล้าตัวขนมจีบได้ค่ะ หมดแล้ว ค่อยเทใหม่ค่ะ) *วิธีการต้มขนมจีบหมูเด้ง 1. เมื่อน้ำเดือด ให้เอาขนมจีบ เทใส่หม้อต้ม รอจนกระทั่ง ขนมจีบลอยขึ้นมา แต่ปล่อยไว้สักพัก เพื่อให้หมูสุกไปถึงข้างใน ใช้เวลาต้ม ประมาณ 5 – 7 นาที (ถ้าไม่แน่ใจก็ ตักออกมา 1 ลูก ลองชิมดูว่าสุกหรือยัง) สำหรับน้ำต้มขนมจีบ สามารถเปลี่ยนน้ำต้มใหม่ได้ค่ะ เพราะถ้าน้ำมีความเหนียว จะทำให้เวลาที่เราต้มชุดต่อไป ขนมจีบจะเปื่อย และติดกันค่ะ 2. พอขนมจีบต้มสุกแล้ว ใช้ตะแกรงตักออกไปใส่กาละมังที่ใส่น้ำมันพืชไว้ คลุกเคล้าให้ทั่วๆ สลัดๆ ให้เสด็ดน้ำออกให้หมดก่อนนะคะ 3.เมื่อคลุกน้ำมันพืชแล้ว ตักใส่ถาด หรือภาชนะ แพคใส่ถุง ซีลถุง เรียงขนมจีบในถุงให้เรียบร้อย อย่าให้ทับกัน แล้วนำไปแช่แข็งไว้ เวลาจะทาน ก็สามารถนำเอาออกมาเวฟ ไมโครเวฟ หรือนึ่งทานได้ (กรณีนี้ ถ้าทำปริมาณมาก ทานไม่หมด หรือจะเอาไปทำขาย ก็สามารถเก็บแช่แข็งไว้ได้เลย เวลาทาน หรือจะขาย ก็ให้เวฟ หรือใช้วิธีนึ่งใหม่ได้เลยค่ะ ปล. ส่วนน้ำจิ้ม หาในกูเกิ้ลได้เลยค่ะ เพราะขนาดไม่จิ้มยังอร่อยมากค่ะ ส่วนวัตถุดิบ ดูตามภาพเลยค่ะ ครูออมซื้อมาจากห้างแมคโครค่ะ แผ่นเกี๊ยว น้ำมันงา เหล้าจีน ซีอิ๊วขาว ซอสหอยนางรม พริกไทยป่น น้ำมันรำข้าว แป้งมัน แป้งถั่วเขียว เนื้อหมู แผ่นเกี๊ยวไข่ แผ่นเกี๊ยวเจ เนื้อปลายี่สก (อาจใช้เนื้อปลาอื่นได้ที่ไม่คาว) ทำเสร็จแล้วขนมจีบหมูเด้ง สูตรครูออม น่ากินมาก น้ำลายไหลกันรึยัง สามารถเก็บไว้ แล้วเอามาอุ่นหรือเวฟภายหลังได้ด้วยจ้า นับว่าเป็นสูตรขนมจีบที่บอกวิธีการทำได้ละเอียดมาก ทั้งส่วนประกอบและขั้นตอนวิธีการทำ สมาชิกแฟนเพจอย่าลืมนำไปลองทำกันนะคะ ว่ากันว่าสูตรนี้มีสมาชิกนำไปทำขายสร้างรายได้เสริม ลูกค้าต่างติดใจชื่นชอบและยอมรับว่าอร่อยมากๆเลยค่ะ ถ้าเห็นว่ามีประโยชน์ก็อย่าลืมบอกต่อเป็นวิทยาทานกันได้จ้า ขอขอบคุณข้อมูลและภาพจากคุณกบ ประภัสสร แดงสกุล เรียบเรียงโดย.พลังใจ บทความผู้สนับสนุน

DONGPO ROU - Diana Chin For this evening’s dinner, hubby craved for “DONGPO ROU”. He recalled the best tasted Dongpo Rou was when we had a trip to Hangzhou a couple of years ago. Enjpyed the sights, show by Zhang Zimou and cuisine there. He also asked for JIU HU CHAR too. I made BUTTERMILK PAO, a squarish looking one. INGREDIENTS: 600 to 700g of Pork Belly. 6 to 8 scallions, depends how big is your clay pot/stainless steel pot 2 inch ginger, slice 1/2 cup premium soy sauce ( low sodium) 1/2 cup Shaoxing wine 2 tbsp of caramelized sauce 40g rock sugar, or more according to taste. 2 star anise ( for that wonderful spice flavour) STEPS: Bring a pot of water to boil. Add pork belly and boil for 5 minutes. Discard water, rinse pork belly under running water. Pat dry and then cut meat into 2 1/2 inch squares and tie them with food strings to avoid the meat from falling apart from braising. Lay the scallions on the pot, topped off with gingers and placed the boiled pork skin facing down. Add light soya sauce, caramelized sauce, wine, star anise and adequate amount of water to cover the pork level to half. Boil at high heat for 30 minutes. Then turn the pork skin up and continue braising with low heat for 2 hours or until pork is tender ( QQ texture). Add seasoning, as per your taste ( sweet, salty or sweet salty) Serve Dongpo Rou with rice or steamed buns. Enjoy!

I discovered this dish, Fuk-Tong Pad Khai, at one of the food stall in Chatuchak Market, Bangkok. As it was a short working trip, I had to grab a quick bite and nothing is faster than a mixed rice stall. I have to say, the 3 dishes that I took were all yummy but this one, Stir-Fried Pumpkin With Egg, was especially memorable. So when I came back, I checked out the recipes online and found many versions to it but they uses Japanese pumpkin (kabocha). I guess the reason must be kabocha is much tender and has a crunchy texture. I managed to get a kabocha and I think I've nailed it on my first try testing out the recipe. If you love stir fry pumpkin, you'll love this. Thai Stir-Fried Pumpkin With Egg (Fuk-Tong Pad Khai) (A) 150 g minced meat (can be chicken or pork) 1/2 tsp fish sauce 1/4 tsp sugar 1/2 tsp cornstarch A dash of ground white pepper 400 g Japanese pumkin (kabocha) 2 eggs 1 - 2 cloves garlic, minced 2 Tbsp vegetable oil 1 - 2 Tbsp chopped spring onion (B) 100 ml water 1 Tbsp oyster sauce 1/2 Tbsp fish sauce 1/2 tsp sugar Dash of ground white pepper Mix (A) evenly together to marinade the minced meat. Mix (B) together and set aside as the sauce. To prepare the pumpkin, remove the skin but you can keep some on as this variety of pumpkin is pretty young and tender. Should you use the local pumpkin, remove all the hardy skin. Cut into wedges and remove the seeds. Then slice diagonally into 1 - 1.5 cm thickness. Heat oil and fry garlic till fragrant. Add in the minced meat and stir fry till cooked. Next, stir in the pumpkin slices. Spread and leave a well in the centre of the pan. Crack in the eggs and break up the yolks. Leave it to cook, do not scramble the eggs. Once the eggs cooked up, stir in the pumpkin slices. Stir mixture (B) before pouring into the pumpkin and egg. Cook until most of the liquid dries up. Scatter in some chopped spring onion and dish up. Serve with steamed white rice.
